Assorted roasted vegetables with hummus, lettuce, and tomato are wrapped in a thin bread to create this irresistible Lavash Wrap Sandwich.

Lavash Wrap with Roasted Veggies

eggplant

red pepper

zucchini

tsp cumin

coriander

garlic powder

tsp salt

tsp pepper

olive oil

lettuce

tomato

hummus (1/4 cup for each sandwich)

Preheat oven to 425 F. Cut bottom and top off eggplant. cut in half, and then cut into thin strips. Trim top and bottom of zucchini. Cut in half lengthwise, and the cut into quarters. Thinly slice red pepper. Place the vegetables in a single layer on two sheet pans lined with aluminum foil.

Drizzle 1 tsp of olive oil over top each sheet pan covered with vegetables. Sprinkle cumin, coriander, garlic powder, salt and pepper over top the vegetables. Roast in the oven for 20 minutes at 425 F.

Spread hummus over top the lavash bread. Cover in lettuce. I used spring mix, but you can use spinach or any lettuce of your choosing. Thinly slice tomato and place two slices on each sandwich.

When roasted vegetables are ready place about 3 strips of eggplant. zucchini, and red pepper on each sandwich. Stuff with more or less vegetables depending on how much you like.

Place bread on aluminum foil. Fold top and bottom of bread over the veggies, then tightly roll using the aluminum foil to hold everything together. Cut in half, and serve!

Lavash Wrap

These lavash wraps are filled with smoked salmon, fresh dill, capers, red onion, avocado, arugula, whipped cream cheese and lemon zest. An easy, 15-minute appetizer or quick healthy lunch!

Smoked Salmon Lavash Wraps

lavash bread (or sub extra-large tortilla

cream

baby greens- arugula or baby spinach

cucumbers,

salmon

avocado, sliced

capers

red onion, finely diced

dill

lemon

Place lavash bread on the counter. (If it feels stiff, gently warm it in a toaster oven for a couple of minutes or  oven rack to soften and make it more pliable.) Spread a thin layer of whipped cream cheese all the way to the edges.

Add the greens, leaving 2 inches bare along the edge. Add the cucumber ribbons. these are easy to make using a veggie peeler.

Add the avocado slices, smoked salmon, capers, red onion and fresh dill.

Zest the lemon over the entire area letting the lemon oils scatter below.

Roll the lavish, placing the bare edge away from you, and place the seam side down on a cutting board.

Cut into 1 &#8211; 1 ½ inch slices and place on a platter.

It looked intriguing, so had to be tried. Was fun to make and is a real winner. Thank you for all these great, and inspirational recipes.

Roasted Vegetable and Hummus Grilled Lavash Wrap

Vegan Lavash Wraps (I bought mine at Trader Joes)

broccoli florets

cauliflower

yellow onion

yellow squash

spinach

carrots

hummus (I used plain oil-free, but you can choose your flavor)

Preheat your oven to 400 degrees.

Line a baking sheet with parchment paper or a silicone baking mat.

Cut chosen vegetables into bite-sized, equal pieces.

Toss the chopped vegetables in garlic powder, onion powder, pepper and salt.

Place vegetables in a single layer on the baking sheet.

Bite-sized pieces will roast in 30 minutes; the smaller you cut the vegetables, the quicker they will roast, so watch them carefully.

In the meantime, chopped tomatoes, shred the carrots and cut the spinach into smaller pieces; set aside.

Removed vegetables from oven, and allow them to cool enough to touch.

Preheat the panini maker, grill or skillet (you do not need oil)

Using the lavash on a flat surface, put a thin layer of hummus on the base of the bread through the middle.

Add raw vegetables first: Spinach, carrots, and tomatoes (they provide a barrier for the roasted vegetables, so you can roll your lavash without breaking from the moisture in the cooked vegetables.

Roll it like a tortilla, but you don&#39;t need to tuck in the sides like a burrito.

Place on panini maker and grill on medium-low until toasted.

Or, you can use a skillet, and cook on medium-low, turning every 5 minutes until browned on both sides.

Cut and serve.

I served the lavash bread sandwiches with a  side salad.
