This garlic confit with leeks, jalapenos and dried cherries is jammy and flavorful, easy to make and deliciously spreadable. You&#039;ll want to add it to pasta sauces, pesto and salsa, Italian dishes, hummus, soups and stews....and my favorite way to use garlic confit: slather it onto some crusty bread...next level YUM!

Garlic Confit Recipe

garlic

leeks

jalapeno peppers

tbsp unsweetened dried cherries

olive oil (extra virgin)

Preheat oven to 300 degrees.

Prep the veggies: Separate heads of garlic into cloves and peel. Wash leeks, trim and thinly slice white parts. Thinly slice jalapenos and discard seeds and membranes.

Place garlic cloves, leeks, jalapenos and cherries into shallow baking dish. Use enough olive oil so everything is totally covered.

Bake in 300 degree oven for 1 hour and 20 minutes, until golden and garlic is tender. Check after 1 hour, to be sure everything is submerged and garlic is not overcooking.

Store in clean jar with tight fitting lid in the refrigerator for up to 2 weeks. You can also transfer to ice cube trays, freeze and then pop into zip top bags for up to 3 months.

Leek Confit Pizza

lb Pizza Dough

mozzarella

lemon

Red Pepper Flakes

arugula,

leeks (about 3 bunches), trimmed, cleaned and thinly sliced

garlic,

olive oil

Kosher salt

black pepper

Heat the olive oil in a large, deep saucepan set over medium heat until the oil shimmers. Add the leeks, season with the salt and pepper, and cook, stirring occasionally, until the edges are beginning to brown, 5 to 7 minutes; be careful not to allow them to burn.

Reduce the heat to low, cover and cook, stirring occasionally, until leeks are completely softened and somewhat translucent, 28 to 30 minutes. Uncover and reduce the heat to the lowest setting on your stove. Add the garlic. Cook, stirring frequently, until any liquid released by the leeks while cooking has been almost fully absorbed, another 2 to 3 minutes. Transfer to a container and set aside.

Preheat oven to 475 degrees

Divide the pizza dough into 2 even pieces. Stretch each piece of dough in a circular motion, then lay them both out on a flat surface and flatten out using a rolling pin. If you have a pizza peel, sprinkle some flour on it and place the stretched out dough on the peel.

Once your 2 pizza doughs are flat and ready to be heated, use a spoon to spread about ¼ cup of leek confit all around the dough leaving a little bit for the crust.

Top each pizza with half of the shredded cheese, fresh mozzarella and season with salt, pepper and red pepper flakes. Transfer the pizzas into the oven and bake for 12-13 minutes until the crust is perfect.

Remove pizza from the oven. Adjust seasoning as needed, add arugula, squeeze lemon juice on top and serve.

Incredible!  Unique and delicious.  We had enough extra confit to make this pizza again a second night!

The leek confit itself deserves 10 stars and this pizza is my new favorite. The combo of the cheeses with the leeks is delicious. Had prosciutto in the fridge and added that on top of the arugula.

Haven’t made the pizza yet, but the leek confit is phenomenal. Making a batch today and adding it to a grilled cheese with some fontina and mozzarella and bacon. I mostly use it on toast, broiled with cheese as another commenter said, just because I want to dig into it immediately once the confit is done!

This pizza is amazing! I make it quite often for company and everyone digs it!

Delicious! This was a great change of pace for our weekly pizza night. I added thinly  sliced baby Bella mushrooms and some chopped prosciutto. So good! Will be making again!
