Leftover lamb curry

onions, roughly chopped

garlic clove, chopped

thumb sized piece ginger, peeled and chopped

tbsp oil

tbsp medium curry paste

can chopped tomatoes

red chilli,

cinnamon

lamb stock

leftover roast lamb, chopped into large chunks

coriander,

basmati rice, naan bread

Whizz the onion, garlic, ginger and 200ml water in a <a href="https://www.bbcgoodfood.com/content/test-five-best-food-processors">food processor</a> until you have a smooth paste.&nbsp;

Heat the oil in a <a href="https://www.bbcgoodfood.com/review/test-best-casserole-dishes">casserole dish</a> and fry the onion mixture&nbsp;for 10-15 mins or until all the liquid has been absorbed and the onion begin to turn golden brown. Add the curry paste and fry for 1 min more. Stir through the tomatoes, cinnamon&nbsp;and&nbsp;chilli. Pour in&nbsp;the stock and bring to a simmer. Add the lamb and cook, covered for 1 hr.

Remove the lid and simmer uncovered for 15 mins to reduce slightly. Season to taste and stir through the coriander. Serve with fluffy basmati rice, naan bread and yogurt.&nbsp;

Fry onions, spices, and tomato puree to make a rich, comforting curry sauce for leftover lamb. Simmer for 15 minutes for a simple week-night curry. Keto friendly.

Leftover Lamb Curry

vegetable oil

curry powder

turmeric powder

tsp plain flour

g lamb

240 ml lamb or chicken stock

tomato puree

salt and pepper

Chop the onion, and fry for a couple of minutes, until just starting to turn translucent. Peel and crush the garlic, and add it to the onion. Cook for about another two minutes. Add the curry powder, turmeric, flour and lamb, and then stir well to make sure that the meat is coated.

Cook for at least two minutes more, until the spices are really fragrant, to make sure that the sauce won’t taste of flour.

Add a little of the stock, and stir in to make a smooth paste. Then slowly add the rest of the stock. This two-stage process is important, because it helps to avoid lumps in the sauce. 

Stir in the tomato puree. Cover, turn the heat right down and simmer for 15 minutes. Serve with rice.
