Pressure Cooker Mexican Pork is a cook once, eat twice pork recipe! The sky is the limit when it comes to using up the leftovers; tacos, salads, tortas, pizza, enchiladas, burritos, quesadillas, and soup! You can serve this basic pork recipe to your family several times in one week and they will never know they're eating leftovers!

Pressure Cooker Mexican Pork

pork butt roast

tsp smoked paprika

tsp cumin

tsp chili powder

onion powder

oregano

tsp salt

tsp black pepper

orange juice

lime juice

lemon juice

soy sauce

olive oil

Mix all the spices together. Set asideAdd pork roast to a pressure cooker. Rub pork roast with olive oil. Sprinkle spice mixture over pork roast. Gently rub to help it stick to the pork roast.In a seperate bowl add orange, lime, and lemon juice, and soy sauce. Whisk together. Pour in the pressure cooker. Pour it next to the pork so the liquid doesn't wash seasonings off of the roast.Set pressure cooker to high pressure and cook for 90 minutes. After cooking time allow pressure cooker to naturally release.Remove pork from pressure cooker and shred with two forks. Discard fat.Return pork to pressure cooker allowing it to soak up the juices.Serve any way you like! Store leftovers in an airtight container for up to 4 days.

Mexican Pork can easily be made in the slow cooker. Follow the instructions the same as listed for a pressure cooker, except cook on high for 6 hours in the pressure cooker.&nbsp;Leftover Mexican Pork is fantastic in tacos, enchiladas, burritos, soups, salad, tortas, or on pizza.

Spicy Pork Noodles

Tbsp oil

brown sugar

Tbsp chili garlic sauce

(3-oz) packages ramen noodles, any flavor

green onions, (sliced)

Open ramen noodles and discard flavor packets. Cook ramen noodles in boiling water for 3 minutes. Drain and set aside.

While noodles are cooking heat oil over medium-high heat in a large skillet. Add pork tenderloin and cook until starting to brown.

Add brown sugar, soy sauce and chili garlic sauce to skillet. Stir. Reduce heat simmer for 5 minutes.

Add cooked noodles to skillet and toss to coat. Sprinkle with green onions.

A delicious way to use leftover roast pork with directions for making in an electric pressure cooker.

Leftover Pork Roast Stew with Hominy (Posole)

vegetable oil (I use avocado oil)

onion (finely diced)

celery (finely diced (optional))

carrots (finely diced)

garlic (finely chopped)

hominy (drained)

chicken broth

fresh oregano (finely chopped (or substitute 1/4 teaspoon dried))

chili powder

cumin

salt

pepper

cilantro

Press the Sauté button and allow to preheat until it says HOT. Add oil and chopped onions and cook for about 3-4 minutes, stirring frequently until onions are softened.

Add remaining ingredients, except cilantro, to Instant Pot and stir to combine. Place the lid on and close the pressure valve. Press the &quot;Manual&quot; button and then adjust the time by using the + or - button to set for 7 minutes on HIGH Pressure.

When finished, use a quick release. Alternatively, allow pot to lose pressure naturally (do nothing) and it will automatically keep your soup warm until you are ready to eat.

Add chopped cilantro when serving.
