This tangy Lemon Butter Baked Cod Fish is baked in a creamy lemon butter sauce that is a purely sinful delight! The light flakiness of a superb cod fillet is complimented perfectly with such a rich sauce. This easy baked cod is literally is dripping in flavor!

Lemon Butter Baked Cod

Tbsp olive oil ((to grease your baking dish))

heavy cream

Tbsp butter

white wine ((dry, we used Pinot Grigio))

lemons

tsp salt

tsp white pepper

In a small to medium size saucepan, melt the butter over medium heat. Add heavy cream, dry white wine, lemon juice, the first 1 Tbsp portion of chopped dill and the first 1/2 portion of lemon zest. Stir to combine, add seasoning (salt &amp; ground white pepper) then allow lemon butter sauce to come to a low simmer. Remove from heat.

Lemon Butter Sauce

Rinse and pat dry your cod fillets. Grease a small baking dish (big enough to fit your cod fillet portions into) with olive oil, butter, or non-stick cooking spray. Preheat your oven to 425°F (218°C).

Pour enough of the lemon butter sauce to cover the bottom of your baking dish, then arrange your cod fillets into the baking dish on top of the sauce. Sprinkle with the remaining portions of chopped dill and lemon zest, then season with salt and pepper (to taste).

Leave uncovered and bake at 425°F (218°C). Depending on the thickness of your cod fillets, my thickest cod fillet cooked in 20 minutes. If you are using thin cod portions, cook for 12-15 minutes and check the center of your largest portion. The cod should be white and flaky when done. Serve immediately with remaining lemon butter sauce.

Lemon curd or lemon butter - depending on where you are from - is an easy thing to make and can be used to fill tarts, in pastries, over ice cream and a variety of different desserts and sweets. It can even be used as butter and spread all over your toast! This recipe uses dairy-free butter, is vegetarian and is gluten-free to boot.

Garlic butter baked salmon in no time at all! Start with a simple lemon garlic butter sauce that’s super fancy but also really easy to make then we just pour this on top of a filet of salmon and bake it off in the oven wrapped in foil. The salmon is flakey and tender this way, and the garlic butter flavor is out of this world!

Garlic Butter Baked Salmon in Foil

¼ pound sockeye or coho salmon (preferably wild-caught)

EACH: lemon juice AND cold butter, cubed

PREP: Position a rack in the center of the oven and preheat the oven to 375ºF. (see notes)

SAUCE: In a saucepan over medium heat, combine the lemon juice and minced garlic, allow the lemon juice to reduce to 1 tablespoon. Add in 1 tablespoon of butter, remove pan from heat and swirl so the butter starts to melt. Place back on the heat for a few seconds, removed and continue to swirl until butter completely melts. Repeat with second tablespoon of butter. When butter is completely melted, add the Italian seasoning, red pepper flakes, salt and pepper. Then, remove sauce from stove.

BAKE: Place the salmon filet in a piece of foil large enough to fold over and seal. Using a brush or spoon, brush the salmon with the garlic butter sauce. Cover with foil so that all sides are properly closed so the sauce does not leak. Bake the salmon for 12-14 minutes or until mostly firm to the touch. Open the foil and allow the fish to broil under the broiler for 2-3 minutes, keeping an eye on it so the fish does not burn. Remove from oven, top with parsley. Serve immediately.
