And did I say it was gluten free?!&nbsp; Steelhead trout is a fatty fish with a high fat content.&nbsp;&nbsp;

Trout (or Salmon) with Garlic Butter Lemon Caper Sauce

1.5 lb steelhead trout ((3 fish fillets)

Italian herb seasoning ((dried thyme, oregano, parsley, combined))

salt (to taste)

olive oil

capers (, drained)

garlic (, diced)

lemon juice (, freshly squeezed)

butter (, softened)

Season the tops of fish fillets with Italian herb seasoning and salt (generously).  Fish fillets will have skins on the bottom.

In a large skillet, heat olive oil on medium heat until heated but not smoking. 1 tablespoon of olive oil is enough as fish will release lots of its own oil (steelhead trout is a fatty kind of fish).    Add steelhead trout fillets, skin side up, non-skin side down.  Cook for about 1.5 minutes on medium heat, making sure the oil does not smoke.&nbsp;&nbsp;

Turn the fillets over, skin side down. Cook for another 1.5 minutes on medium-low heat (keeping oil from burning).&nbsp;

Remove from heat, close the pan with the lid, and let the trout sit for 5-10 minutes until flaky and cooked through completely.

After the fish is cooked through, using spatula, carefully remove trout fillets to the plate, separating the fillet from the skin (skin will remain on the bottom of the pan).  Carefully scrape the fish skin off the bottom of the pan, making sure to leave the fish oil in the pan.

How to cook trout

Add capers, diced garlic, and lemon juice to the same pan with oil.  Cook on medium-low heat for about 1 minute, until garlic softens a bit.  Remove from heat.  Add 2 tablespoons of butter, off heat, to the caper sauce, stirring, until butter melts and forms a creamy mixture.

Add fish back to the pan, spoon sauce over the fish and serve.

Seared Halibut with Lemon Caper Sauce

Tablespoons Extra virgin olive oil, (divided)

Tablespoons butter, unsalted (divided)

lemon,

Tablespoons garlic, minced

shallots,

dry white wine, (such

Tablespoons capers, drained

Tablespoons lemon juice, divided

crab meat, shredded

Tablespoon flat-leaf parsley, (finely chopped)

Pat dry and sprinkle halibut fillets with sea salt and pepper.

Heat a large saute pan over medium-high heat. Add 1 tablespoon olive oil and 2 tablespoons butter and swirl to coat pan.

When the oil is shimmering add halibut fillets and sear about 5 minutes per side. Check for doneness and remove to a plate. Add lemon slices and briefly sear until softened, then set aside with fish. Wipe out the pan.

Reduce heat to medium, add 1 tablespoon olive oil and 2 tablespoons butter. Add garlic and shallots and saute for 1 minute. Add wine and reduce for 2-3 minutes, until nearly evaporated. Add capers, and 3 tablespoons lemon juice. Cook for 1 minute. Turn off the heat and swirl in remaining 2 tablespoons of butter to finish the sauce.

Put halibut fillets back into the pan, adding any juices that are on the plate. Warm for 1 minute.

In a small bowl add crab meat and 1 tablespoon lemon juice. Mix to combine

Serve halibut on a shallow plate, top with dollop of crab mixture. Spoon lemon caper sauce over top of halibut and add a sauteed lemon slice as garnish. Sprinkle with chopped parsley.
