Lemon Chicken Pasta

mini farfalle pasta ((or your favorite bite-size pasta))

2-3 boneless skinless chicken breasts

Salt and black pepper

lemon zest

garlic powder (, divided)

Italian seasoning (, divided)

onion powder

Tablespoons olive oil (, divided)

zucchini (chopped)

yellow squash (chopped)

garlic (, minced)

Tablespoons butter

parmesan cheese

parsley leaves (, chopped)

Cook pasta according to package instructions.

While the pasta cooks, season chicken, on both sides, with salt and pepper. Season with lemon zest, and 1/2 tsp EACH of garlic powder, Italian seasoning and onion powder.

Add olive oil to a large skillet over medium-high heat. Once hot, add seasoned chicken and cook for 3-5 minutes on each side, flipping once, until cooked through. Remove chicken to a plate and tent with foil to keep warm while it rests.

Add another tablespoon of oil to the skillet. Once hot, add the chopped zucchini and yellow squash. Season with salt and pepper, 1/2 tsp garlic powder and 1/2 tsp Italian seasoning. Cook,on medium-high heat for 2 minutes. Add minced garlic and cook for 30 seconds.

Add hot cooked pasta to the pan, along with the butter and lemon juice. Toss everything to combine, until butter has melted. Sprinkle with parmesan cheese and toss to combine.

Chop the chicken and return to the pan. Serve, garnished with parsley and additional parmesan cheese, if desired.

Creamy Lemon Chicken Pasta + Super Easy Sauce

Simple and delicious fettuccine pasta made with garlic, parmesan cheese, lemon, and herbs. Then topped with sliced chicken breast.

olive oil (divided)

lb chicken breast

Kosher salt and pepper (to taste)

herbs de Provence

fettuccine pasta (gluten-free option,

garlic (minced)

oz artichoke hearts, coarsely chopped (one can)

baby spinach

Heat 1 tablespoon of oil in a large skillet over medium-high heat. I use a large one to finish up the pasta in it.

Add the chicken and season with salt, pepper, and herbs de Provence. Cook for 4-5 minutes per side, or until cooked through. Allow it to sit on a chopping board for a few minutes before slicing it.

Meanwhile, in a soup pot bring water to a boil. Add in 1/2 tbsp salt and the pasta. Cook as directed on the package, then reserve 1 cup of the pasta water before draining.

On the same pan you cooked the chicken, add the remaining tablespoon of oil. Sauté the garlic, over medium heat, for 30 seconds. Stir in the artichoke and spinach, and cook, stirring frequently, until the spinach is wilted.

While the pot is still on heat, add in the cooked pasta, together with the pasta water and remaining ingredients.

Toss to combine for a couple of minutes.

Serve immediately and enjoy!

This chicken and broccoli pasta recipe has the most delicious creamy lemon sauce and is perfect for a quick and easy dinner option.

Chicken and Broccoli Pasta

Cook the pasta in salted water according to package instructions. Add the broccoli to the pot during the last 4 minutes of cooking time.

Reserve 1/4 cup of pasta cooking liquid.

Melt the butter in a pan over medium-high heat until browned. Add the heavy cream, 1/2 teaspoon salt and 1/4 teaspoon pepper.. Bring to a simmer and cook, stirring, until thick enough to coat a spoon, about 4 minutes. Remove from the heat and stir in the lemon zest and juice.

Place the pasta and broccoli back into the pot you cooked it in.

Pour the cream sauce over the pasta mixture and toss to coat evenly, adding pasta water if needed to thin the sauce. Stir in the parmesan cheese. Arrange the chicken on top of the pasta.

Add more salt and pepper to taste if needed. Garnish with chopped parsley and lemon slices if desired. Serve immediately.

In a bowl, combine the parsley, 60 ml ( cup) of olive oil, lemon zest and juice, and garlic. Season with salt and pepper. Set aside.

Succulent! J'ai mis un peu moins d'huile et ajouté un peu de mélange laitier 5% pour un peu plus d'onctuosité! Pour répondre à Valérie M. et à l'inverse de ce que Odette S. dit, un poulet n'a qu'une seule poitrine (comme n'importe quel être vivant!). En épicerie, ce qui nous est vendu, ce sont des demi-poitrines. Vous pouvez vous référez au site lepoulet.qc.ca pour avoir un visuel!

Ma chère Valérie, un poulet à 2 poitrines. Alors vous prenez une poitrine et vous la tranchez en deux sur l’épaisseur. C’est ce qui fait deux demi poitrines de poulet.
