Lemon Poke Cake is a delightful dessert that marries the tangy freshness of lemon with the sweetness of cake. Infused with lemon pudding and topped with Cool Whip, this cake is a citrus lover&#x27;s dream.

Lemon Poke Cake

lemon cake mix (plus required ingredients)

lemon pudding mixes

milk

container Cool Whip

lemon zest (optional)

Prepare lemon cake mix according to package instructions in a 9x13 baking dish. 

Meanwhile, prepare the lemon pudding mixes by mixing it with the milk. Set aside until needed.

Once the cake is cooked, remove it from the oven and immediately poke holes in the cake using the handle of a wooden spoon. 

Spread the lemon pudding mix over the surface of the cake, spreading it evenly using a spatula.

Allow the cake to cool, then chill in the refrigerator for at least 2 hours.

Spread the cool whip over the chilled cake. 

Garnish with lemon zest if you’d like.

This cake is amazing!   My granddaughters and hubby absolutely loved it.  You can substitute 1 can lemon pie filling for the jello.

Lemon Jello Cake Recipe

Lemon

3.4 Ounce Lemon Jello Mix (Jello NOT Pudding)

Eggs

Vegetable Oil

Water

Lemons (Juice and zest)

Confectioners Powdered Sugar

Preheat oven to 350 degrees

Combine Lemon Cake Mix, Lemon Jello Mix, Eggs, Water and Vegetable Oil in a large bowl. Mix until combined

Grease and flour a 9x13 baking pan

Pour cake mix into cake pan and bake for 35 minutes

When the cake is done and still hot poke holes all over the top of the cake.

Pour Lemon Icing Glaze over the cake while it is hot and evenly spread.

Juice and zest 2 lemons

Combine Lemon juice, Lemon Zest and Powdered sugar in a bowl until well combined

Lemon Icing Glaze

Delicious and easy to make. The glaze really gives the lemon cake a more intense lemon flavor. Reminds me of the lemon cake my mom used to make❤️
