Garlicky Spaghetti

garlic, divided

c. extra-virgin olive oil, divided

c. panko bread crumbs

red pepper flakes

Kosher salt

dry spaghetti

butter

anchovy filets, minced (optional)

lemon

c. Parmesan (optional)

c. parsley

Very good exactly as written.  The garlic panko breadcrumb mixture makes all the difference!  (1 lb of spaghetti is a lot of spaghetti if this is to be a side dish for 4.)

Made this with Chicken and we LOVED it!! I used garlic powder instead of real garlic, I wasn’t going out to buy the real stuff. I didn’t use anchovy’s, made the pasta with minimal water and it turned out excellent!! I even used bottled Parmesan.. thank you for the recipe!

This was crazy good!  Not dry at all and didn’t even add the water.  HIGHLY recommend.  Used fettuccini and forgot parsley

Terrific. I accidentally added lemon, I thought I saw that in the recipe and realized after I added it it was a mistake. So good. I used Italian bread crumbs and I didn’t add the anchovie.

Very delicious.  Skipped the butter and made it vegan.  Paired it with a 2015 Bocelli Sangiovese and a friend and I was in pasta heaven.  Would do it again and again.

Definitely too dry, but I knew it would be too dry when I read the directions. I added more garlic, chicken broth, and a little heavy cream. Turned out very good.

Good taste. Ingredients clumped together a bit. Had to doctor it a little bit with some extra butter.  We added some cut up grilled chIcken and sun dried tomato.  I will probably half the amount of pasta next time. It was way too much for 3 of us.

It came out pretty good. I followed the directions accordingly and ended up putting about 2 cups more of the pasta water and a couple more tbsps of olive oil. Next time i'd like to add jumbo shrimps to this dish and whole wheat spaghetti

Made this for dinner last night and it was a hit! Because I cook GF, I used GF Spaghetti and GF panko and it turned out amazing. There was only a small amount left over, but that'll be gone at lunch today. In the rush to feed my hungry family I forgot to take a final picture, but here is my prep work.

This quick and easy Lemon Parmesan Pasta with Greens has amazing flavors and is a great meatless dinner. I use Fiber Gourmet Light Pasta to make it lower in carbs; if you want even fewer carbs double the amount of greens to make six servings.

Lemon Parmesan Pasta with Greens

oz dry macaroni (preferably Fiber Gourmet Light Elbows)

salt for pasta cooking water

Baby Kale (see notes)

garlic

T lemon zest (or more)

T lemon juice (or more)

olive oil

Cook Macaroni in a large pot of salted...

Cook Macaroni in a large pot of salted water until barely al dente, follow cooking time on the package of pasta. If you're using Fiber Gourmet Light Elbows for the pasta that might take as long as 15 minutes before reaching al dente.

Reserve 1/4 cup cooking water before draining.

While pasta cooks, zest the lemon and squeeze...

While pasta cooks, zest the lemon and squeeze the juice and finely chop the garlic if using fresh garlic.

Wash greens in a salad spinner if needed...

If using larger greens, slice crosswise into 1...

As soon as pasta is al dente, save 1/4 cup cooking water and then drain the pasta well and add to  greens/garlic/lemon mixture, with lemon juice and reserved pasta cooking water (as needed.)

Stir in Parmesan cheese and serve hot, with...

This speedy recipe for lemon spinach pasta has it all!  Pasta, veggies and a light cheese sauce make a satisfying comfort food supper.

Lemon Spinach Pasta

long pasta (spaghetti, linguine, etc)

garlic,

baby spinach

lemons

cheese,

pepper

Cook pasta according to package directions in a large pot of boiling salted water. Scoop out a cup of pasta water before you drain it.

While the pasta is cooking, heat the olive oil and garlic in a heavy deep skillet over medium high heat. Stir in spinach and lemon zest and toss until the spinach is wilted, about 2-3 minutes.

Add pasta to the skillet along with the lemon juice and toss. Add in the ½ cup of Parmesan cheese and enough of the reserved pasta water to make a light sauce.  Toss until everything is well combined, drizzling in more pasta water as needed.  Season to taste with salt and pepper.

Divide pasta among warmed bowls, garnishing with more Parmesan and a grinding of pepper, and serve at once.

This lemon chicken pasta is a delicious combination of tender chicken thighs and a creamy lemon sauce, all served over perfectly cooked pasta. It’s a simple yet elegant dish that's perfect for a weeknight dinner or a special occasion.

Creamy Lemon Chicken pasta

chicken thighs

garlic (minced)

ml chicken stock (made

400 ml single cream

g Parmesan

¼ teaspoon crushed chilli flakes (optional)

500 g dried pasta (cooked according to package directions)

parsley (chopped)

basil (chopped)

Boil the pasta according to the package instructions. Once cooked, drain the pasta, reserving about 250 ml of the pasta water. Set aside.

Cook the Pasta:

Heat a cast iron or non-stick frying pan over medium-high heat and add the olive oil. Season the chicken well with sea salt.

Once the pan and oil are hot (the oil will shimmer), place the chicken thighs in the pan and sear for about 6 minutes on each side until the chicken is cooked through. Use a thermometer to ensure the chicken reaches at least 75°C.

Remove the chicken from the pan and set aside.

Sear the Chicken:

Add the butter to the same pan over medium heat. Melt the butter, then add the minced garlic. Cook for about 5 minutes until the garlic is softened and fragrant.

Pour in the chicken stock or water and scrape any brown bits from the bottom of the pan. Bring to a gentle simmer.

Stir in the lemon juice and zest. Gradually pour in the single cream while whisking continuously. Add the grated Parmesan and simmer gently for about 5 minutes until the sauce thickens. Taste and adjust the seasoning.

Stir in the chopped parsley and basil, and add the crushed chilli flakes if using. Toss the cooked pasta into the sauce, adding reserved pasta water as needed to achieve the desired consistency.

Make the Sauce:

Slice the chicken thighs and place them on top of the pasta. Pour any juices from the chicken back into the pan.

Assemble the Dish:

Absolutely delicious, not a huge fan of cream so was a bit concerned about the amount....  The lemon cuts through perfectly.  All round gorgeous meal :)
