This bright and refreshing orzo salad is made with orzo, fresh vegetables and herbs, and tossed in a savory vinaigrette.

Lemon Orzo Salad

orzo (uncooked)

cucumbers (diced)

shallot (diced)

cherry tomatoes (diced)

onion

asparagus (blanched, roasted,

basil (chopped)

olive oil

lemon juice

tbsp agave nectar

garlic (minced)

rosemary (finely chopped)

salt

½ tsp pepper

Wash and prep all produce according to the ingredient list.

Cook the orzo according to the package instructions. After cooking drain and set aside.

Mix together all of the ingredients for the vinaigrette and set aside.

Combine all ingredients for the orzo salad in a large bowl. Pour the vinaigrette on top and toss the orzo salad until full coated in the dressing.

This one pan creamy Lemon Spinach Orzo is an easy, light dinner or an amazing side dish! The lemon zest and juice lift the flavor creating a bright and light sauce that coats the orzo pasta perfectly. If you haven&#39;t jumped on the orzo train yet, now is the time!

Lemon Spinach Orzo

unsalted butter

garlic,

orzo

milk

chicken broth

lemon

oregano

spinach

lemon, juiced

Parmesan Cheese

salt and pepper,

Heat butter in a large skillet over medium high heat. Add in orzo and toast for 2 minutes stirring continuously until the pasta starts to get a bit golden.Add in garlic and cook stirring often for about a minute.

Stir in the milk, chicken broth, lemon zest and dried oregano. Bring to a simmer and cover. Simmer for 12-13 minutes or until the pasta is tender.

Add in the spinach and cook until wilted, 1-2 minutes.

Remove from the heat and add in Parmesan Cheese and lemon juice. Season with salt and pepper to taste. Serve immediately and enjoy!
