In a medium bowl whisk together the flour, baking powder, salt and zest. Set aside.

In the stand up mixer using the flat beater cream the butter and sugar until light and fluffy, about 3 minutes. Add the egg, vanilla and lemon juice and combine.

Add the whisked flour mixture and combine. Move to a lightly floured flat surface and gently form into a ball. Wrap the dough in plastic wrap and refrigerate for 1-2 hours.

Then roll the dough into 1/4 inch thick (or a little thicker if you wish) and cut with round cookie cutter or cutters of choice. Place the cookies on parchment paper lined cookie sheets and refrigerate for 15-20 minutes while the oven is pre-heating.

Pre-heat oven 350F (180C).

Sprinkle with plain or lemon sugar. Bake in pre-heated oven for about 7-9 minutes.

Let cool on cookie sheets for approximately 2-3 minutes before removing to a wire rack to cool completely. Drizzle with glaze if desired. Enjoy!

Lemon Cut-Out Sugar Cookies

all-purpose flour (375 grams)

unsalted butter, room temperature (226 grams)

sugar (150 grams)

confectioners’ sugar (60 grams)

lemon zest,

egg (preferably room temperature)

lemon juice (15 milliliters)

In a medium bowl, combine flour and baking...

In a medium bowl, combine flour and baking powder with a whisk.  Set aside.

Using a hand mixer or a stand mixer...

Using a hand mixer or a stand mixer fitted with the paddle attachment, beat the butter and salt on medium speed until combined, about 1 minute.  Add in sugars and lemon zest and beat until smooth, about 1 ½ minutes. Beat in egg and lemon juice and mix until well combined, about 1 minute.  Scrape up and down the sides of the bowl.

Small Batch Lemon Cookies

brown sugar

tbsp salted butter (room temperature)

egg yolk (room temperature)

baking soda

all-purpose flour

granulated sugar (for rolling cookies in)

Preheat oven to 350 F. Line a baking sheet with parchment paper.

Place sugars in a medium mixing bowl and add 1 tbsp of lemon zest. Rub with your fingers until the zest has become flavorful and mixed into the sugars.

Add the butter to the bowl and beat together until light, about 3 minutes. You can also mix this by hand. Add lemon juice and egg yolk  and mix again.

Slowly mix in baking soda, salt, baking powder and flour until combined.

Scoop the dough into 5 large balls, I used a 3 tbsp scoop, and roll in extra sugar. Place cookie dough balls on your lined baking sheet.

Bake the cookies for 11-13 minutes. You&#39;re looking for a nice light golden brown around the edges, and some crackling along the top.

My father in law has been asking me to recreate the Pepperidge Farm ojai lemon cookies, and this recipe was perfect! He wanted a crispy cookie, so I used all white sugar and cooked them longer. They turned out perfectly, and the small batch was such a nice amount!

These were SO good. I wanted them I little taller, so I put the dough in the freezer for a bit before baking. I'm not sure if it worked, but they were super soft and yummy. I will definitely be making these again. Great size for  just a couple people (or myself :) )

Delish! Quick and easy recipe with a tasty result. I was thrown off by no vanilla in the recipe because I swear vanilla is in every cookie, but I think it would have overpowered the lemon flavor. It is perfect as written. The cookie was yummy without being overly tart. The extra sprinkle of sugar at then end was the perfect touch. This recipe is a keeper.
