The combination of light, fragrant lemon verbena custard and blueberries makes for a memorable dessert everyone will love.

This recipe is an extract from Valli Little's new book, My Kind of Food (Harper Collins, $39.99), available nationwide.

Blueberry and lemon verbena tarts

(250 milliliters) milk

lemon verbena leaves lemon thyme sprigs

(55 grams) caster sugar

egg egg

cornflour

milliliters thickened cream

blueberries

(160 grams) blueberry jam

(225 grams) plain flour

(40 grams) icing sugar

tsp vanilla extract

cold unsalted butter, chopped

Juicy and tender baked chicken. Fresh lemons, garlic, rosemary and thyme. Seasoned and coated with a butter-herb sauce and baked to perfection.

Lemon Thyme Chicken with Garlic and Rosemary

chicken

lemon juice, (fresh squeezed)

olive oil, ((optional))

garlic, (minced)

Tablespoons fresh chopped thyme ((or 2 teaspoons dried))

Tablespoon fresh chopped rosemary ((or 1 teaspoon dried))

salt

black pepper

2-3 Tablespoons butter, (melted)

Lemon/Lime

Whisk

Place the lemon juice, lemon zest, olive oil, garlic, thyme, rosemary, salt, and pepper in a small bowl. Whisk to combine.

With the tip of a sharp knife, make a shallow cut into each piece of chicken 2 to 3 times, about 1/2 an inch long. This helps the marinade really get in and penetrate.

Marinade

Place each piece of meat and the marinade in a gallon size resealable bag. Rotate the bag so all the pieces are coated with the marinade. Seal the bag, place in a dish, and then place in the refrigerator for 12 hours up to overnight.

Place

After it has marinated, preheat oven to 375°F. Remove the chicken from the marinade and place in a single layer in a large baking dish.

Bake

Bake for 30 minutes, or until the chicken has reached an internal temperature of 165°F.

Restt

When done, remove the baking dish from the oven and discard the additional liquid. NOTE: There is going to be a lot of liquid left in the dish from cooking the chicken. This is the marinade seeping out of the slits while it cooks. Feel free to discard the extra juices after cooked.

Serve

Melt the butter and baste it on top of each piece. Allow to rest for about 5 minutes before serving.

I live in a home with 4 other adults so I had to double this recipe. I never knew that picking the leaves of thyme and rosemary would be so time-consuming! I was only looking to use them up because I bought too much and didn’t want them to go to waste. But it really did turn out amazing! My mom says it feels like a dish from a fancy restaurant! Everyone loved it! Maybe next time we’ll even buy our thyme and rosemary just to make this dish! (But we’ll involve the whole family while preparing the marinade so it’ll be faster hahaha)
