Lemongrass Chicken Thighs

lbs boneless, skinless, chicken thighs

Ginger,

6-8 garlic cloves,

Lemongrass

tbsp honey

neutral oil, like vegetable oil

tbsp kosher salt

brown sugar, packed

tamari, or soy sauce

tbsp rice vinegar

tsp Sriracha

tsp sesame oil

Garlic,

scallions,

tbsp tamari or soy sauce

tbsp fish sauce

tbsp neutral oil, like vegetable oil

In a small food processor, blend all the ingredients for the lemongrass paste: 2 tablespoons Ginger, roughly chopped6-8 garlic cloves, lemongrass, honey, 2 tablespoons vegetable oil and 1 tablespoon kosher salt

In a large bowl toss the chicken thighs with the lemongrass paste until they’re well-coated.Heat the remaining oil in a large skillet set on medium heat

Cook the chicken in two batches so as not to overcrowd the pan

Place half the chicken thighs in the hot skillet and leave undisturbed for five minutes

Then, flip the chicken pieces and cook until the chicken is cooked through, about eight more minutes

Check for doneness with an instant read thermometer, they are ready when the internet temperature reaches 165°F.While the chicken is cooking, combine all of the ingredients for the sriracha-brown sugar sauce in a sauce pan set over medium heat

Bring to a simmer, and cook until the sauce thickens slightly—about ten minutes—then remove it from the heat

The sauce will continue to thicken as it cools.In a small bowl, whisk together all of the ingredients for the scallion oil

Serve the chicken drizzled with sriracha-brown sugar sauce and scallion oil.

Easy Skillet Vietnamese Lemongrass Chicken

boneless skinless chicken thighs (boneless skinless)

tsp avocado oil

lemon

lemongrass (white part only)

garlic

brown sugar ((for less sweet: use 1 tbsp))

soy sauce (not light or dark!)

On a chopping board, slice off the hard ends of the lemongrass reserving the white part only. Bruise it with the back of your knife. Then finely chop lemongrass. Set aside

Next tenderize the chicken thighs on both sides with the back of a knife until it’s about ½ inch thick. It’s fine if there are some areas that are less thick than ½ inch.

In a bowl or measuring cup, squeeze lemon juice. To the bowl, add brown sugar, soy sauce, fish sauce, minced garlic, and finely chopped lemongrass. Mix.

Pour the marinade over the chicken thighs and mix until thighs are covered in the marinade. Store covered in the fridge for 30-60 minutes. The longer you marinate the chicken the more flavourful.

Heat a non-skillet or pan set over medium heat. Once hot enough, add avocado oil. Shake the chicken thighs of any remaining lemongrass bits before laying it flat into the pan. Fry on each side for 4 minutes (8 minutes in total) until they’re browned in certain areas and the juices run clear. Enjoy!

Vietnamese Lemongrass Chicken

lb chicken thighs (skinless boneless)

shallot (minced)

garlic (minced)

lemongrass

fish sauce

soy sauce

lime juice

salt

½ teaspoon five spice

brown sugar (packed)

honey

Sambal oelek (garlic chili paste)

White rice noodles

Nuoc Cham (Vietnamese Dipping Sauce)

Tomato

Cucumber

Lettuce

Fried Egg (optional)

Prepare the lemongrass. Cut the lemongrass into 2 inch pieces, then pound the lemongrass until flat. Finely mince the lemongrass or place the lemongrass pieces into a food processor and chop until finely minced.

Marinate the chicken. In a large mixing bowl, add the minced shallots, minced garlic, minced lemongrass, fish sauce, soy sauce, lime juice, salt, five spice, brown sugar, honey and sambal oelek. Mix until combined. Add the chicken , cover with plastic wrap and marinate for a minimum of 2 hours, or overnight.

Cook. Add 1 tablespoon of oil onto a hot pan over medium heat and wait until the pan is hot about 2-3 minutes. Lay 2-3 pieces of chicken evenly onto the pan and cook until each side is golden brown and the chicken is cooked through, about 3-4 minutes per side. Make sure to not crowd the pan with the chicken. Repeat with the remaining pieces.

Rest and slice. Remove the chicken from the heat and let it rest for 5 minutes before slicing it into thin pieces.

Serve. Serve with steamed rice or vermicelli noodles, fresh vegetables, and a fried egg. Top with nuoc cham sauce and enjoy!

Easy &amp; Simple Vietnamese Lemongrass Chicken

1.25 lb skinless boneless chicken thighs (or substitute with chicken breast

vegetable oil (or any neutral oil)

shallot

brown sugar (or palm sugar/coconut sugar/cane sugar)

tbsp lime juice (freshly squeezed)

soy sauce (not dark soy sauce)

tsp black pepper

water (room temperature or cold)

white granulated sugar

red chili pepper (finely chopped)

Into a blender or food processor, blend marinade ingredients until it's a smooth  paste. There shouldn't be any large pieces of lemongrass or it'll be unpleasant to eat.

Transfer skinless boneless chicken thighs to a large bowl or a resealable bag. Pour marinade over the chicken thighs and marinate for at least 1 hour, or overnight.

Heat 1 tbsp vegetable oil in a large non-stick pan on medium-high heat. Remove chicken from the marinade shaking off any excess marinade. Fry chicken in small batches in a single layer giving each piece enough space. Cook chicken on the first side for 3-4 minutes until golden brown and charred in some areas.

Reduce to medium heat and flip chicken over and fry on the other side for 2 minutes until browned and juices run clear or an internal temperature of 165 F. Immediately remove cooked chicken from pan. Make sure to clean the pan of the burned marinade between batches and add another tablespoon of vegetable oil to fry the next batch.

In a small bowl, combine Nước Chấm ingredients as listed together. Serve as a dipping sauce with chicken.

I made the chicken last night and it turned out great.  I marinated it for about 4 hours and the flavour was still intense as it should be.  I cooked mine in the air fryer for 10 minutes and it was perfectly cooked.  Can’t wait to make again.
