Light Fruit Cake-  rich, luscious Madeira cake that&#x27;s light, fluffy and moist with a wonderful buttery taste studded with dried mixed fruits.  It has a delicious and festive blend of flavors that&#x27;s perfect for this time of the year!

Light Fruit Cake

unsalted butter

¼ cup (250 grams) granulated sugar

eggs

¾ cups (218.75 grams) all-purpose flour

(8 grams) baking powder

¼ teaspoon (1.25 grams) salt

(48 grams) almond flour (may replace with flour)

¼ cup (60 milliliters) milk

(75 grams) raisins

½ cup chopped mixed dried fruits, candied peel, cherries

(2 grams) nutmeg

(2 grams-4 grams) lime zest

(30 grams-45 grams) dark rum (, optional)

(4.2 grams) almond flavor

(4.2 grams) vanilla extract

Pre-heat the oven to 160°C/325°F. Grease and line the cake tin (pan) with baking parchment

Cream together the butter and sugar at a high speed in a stand mixer until it’s fluffy and starting to look white, about 5- 7 minutes.

Stir in the eggs one at a time, beating the mixture well between each one and adding a tablespoon of the flour with the last egg to prevent the batter from curdling.  Sift in the flour, baking powder and salt into the batter, then add the almond flour. Mix.

Pour in milk a little at a time, then add the dried fruits, nutmeg, lime zest, rum,  almond flavor and vanilla extract.

Stir well until everything is fully combined. Scrape down the sides of the mixing bowl.

Pour batter into a greased and floured bundt or 10-inch cake pan.

Bake at 325 F until a tester inserted into the center comes out clean, 50–60minutes, or until a skewer inserted into the center of the cake comes out clean.

Transfer to a wire rack. Let the cake cool in the pan for 10 minutes. Sprinkle with powder sugar, if desired. 

Serve with tea and/or whipped cream.

This moist Light Fruit cake Recipe is a lovely alternative to other Rich Fruit Christmas cakes that are often eaten during the Festive Season. The mixed dried fruit is soaked overnight with the zest and juice of oranges and lemons, which plumps up the fruits giving the cake a good moist texture.

Light Fruit Cake Recipe

600 g mixed dried fruits containing raisins (sultanas and candid peel.)

finely grated zest and juice of 2 medium oranges

lemons

butter

brown sugar

eggs (lightly beaten)

flour

cherries

apricot jam (sieved)

glacé cherries (cut in half, for decoration, optional)

In a large dish or bowl add the mixed dried fruit, grated zest and juice of the oranges and lemons. Give them a good stir. Leave to soak overnight.

Following day after soaking the fruit overnight.

Preheat

Preheat the oven to 170c fan assisted. Grease and line the base and sides of a deep sided 8inch cake tin with baking parchment.

Beat together

Using an electric mixer, beat together the butter and sugar until light and fluffy. Gradually add the eggs, mix until well combined, adding about 2 tbsp of the flour at intervals to help prevent curdling.

While the mixer is on a low speed, add the remaining flour. Mix until well combined.

Add the chopped cherries, soaked fruit and any residual liquid, to the mixture. Mix until fully combined, do not over mix.

Spoon the mix

Spoon the mixture onto the prepared tin, smoothing out the top of the cake. Cover the top with a sheet of baking parchment to prevent burning and bake in a preheated oven for 30 mins.

Reduce the oven

After 30 mins, reduce the oven temperature to 150c fan assisted and bake for a further 2hours &amp; 50 mins or until baked, testing the centre of the cake, at different points with a skewer, until it comes out clean.

Leave

Leave in the tin to cool for 15 – 20 mins before transferring to a wire rack to cool completely.

Decorate

Decorate with a glaze of gently warmed Apricot jam and sliced Glacé cherries. Finish with a final glaze of Apricot Jam if you wish.
