Each family treasures its own unique Kugelis recipe, carefully passed down from ancestors, keeping the culinary heritage alive. What elevates this dish to extraordinary heights is the heavenly marriage of flavors that comes from serving it with a dollop of velvety sour cream and a sprinkle of crispy bacon sauce.

Kugelis (Lithuanian Potato Dish)

butter

brown onion (large, very finely chopped)

1.3 kg potatoes (peeled)

eggs (large)

salt

50 ml whole milk

lemon (juice only or 1 vitamin C tablet)

bacon

sour cream

salt and pepper (to taste)

Melt the butter in a large frying pan on low heat. Add the finely chopped onion and sautee the onion, until it softens and turns light golden brown. You will find that there is a lot of butter in the pan, and that&#39;s exactly what you want - it will be added to the potato pudding, making it creamy and moist.

Grate the peeled potatoes using the fine zester side of your grater box (alternatively, use a food processor (like Vitamix or an electric grater) to blitz the raw potatoes into a paste.

At this point, preheat the oven to 180° C Fan. Grease the ovenproof dish with oil or butter.

Mix the potatoes with the buttery onion mixture, milk, eggs and salt. Mix in the lemon juice (or crushed Vitamin C tablets). Mix everything very well.

Pour the potato pudding mixture into the prepared dish and bake for 40 minutes. Then increase the temperature to 200℃ and bake for another 15-20 minutes. The top should be golden brown and the sides of Kugelis should be coming away from the sides of the dish.

Make Kugelis:

Whilst the potato pudding is baking, make the sauce.

Add the small cubes of bacon to a large dry frying pan and fry on medium heat until they crisp up and turn brown. Take them out of the pan and set aside.

In the same pan, melt the butter, and add the onions. Saute on medium heat, until softened and browned slightly.

Once the onion is cooked, add the crispy bacon back into the pan and mix. Just before serving, add the sour cream, a couple of tablespoons of water and heat for 3-4 minutes to warm through.

Make The Sauce:

When Kugelis is cooked, leave it in the dish to set at room temperature for 5-10 minutes before slicing. Cut it into portions, dollop a generous amount of onion and bacon sauce on top and serve immediately.

Are pork escalopes authentically Lithuanian? No! But this dish, known in Lithuania as Karbonadas, has been extremely popular ever since the 70s! Blending tradition with the kind of comfort food that brings families together at the dinner table, this Lithuanian Pork Escalopes recipe is quick and easy to make, and is sure to please both adults and children alike! Similar to the German Schnitzel or the American pork cutlet, this recipe offers a juicy, golden brown delight that&#39;s perfect for the whole family. 

Lithuanian Pork Escalopes (Karbonadas Recipe)

pork pork loin,

tbsp all-purpose flour

egg (extra large)

(90 grams) breadcrumbs

¼ tsp pepper

oil & butter (for frying)

Spread the flour on a large plate and season it with half of the salt and pepper.

On a separate plate, mix together the breadcrumbs with the remaining salt and pepper.

Beat an egg in a shallow bowl.

Trim the fat from the pork steaks, if you wish (traditionally, the fat is not trimmed).  Using a meat tenderiser or a rolling pin bash each steak flat inside a sturdy zip lock bag or between two sheets of greaseproof paper. They should be about 5mm (1/4 in) thick.

Dip the pork escalope in the flour, then dip it in the egg wash, and then coat it in the breadcrumbs.

Repeat with the remaining pork steaks.

Heat a large non-stick frying pan over a medium heat and melt a knob of butter and a tbsp of oil. Add the pork escalopes (you may need to do this in batches) and cook for about 4–5 minutes on each side or until golden brown all over.
