Garlic Smashed Potatoes Are Insanely Addictive

Loaded Mashed Potato Casserole is the perfect side dish. These irresistibly creamy baked mashed potatoes are loaded with cheese and topped with crispy bacon.

Loaded Mashed Potato Casserole

½ potatoes

salt (or

milk ((whole

unsalted butter

sour cream

oz Colby Jack cheese (freshly shredded)

oz bacon (chopped)

Tbsp green onion

Preheat oven to 375˚F. Place potatoes in a pot, cover with enough water to submerge potatoes. Bring to a boil over medium/high heat then reduce heat to medium and season potatoes will 1 tsp salt.&nbsp;Cook until potatoes are easily pierced with a knife then drain well.

Meanwhile, in a small saucepan, add the butter and milk and cook until butter is melted. Turn the heat off, keep saucepan on the stovetop to keep the milk hot.&nbsp;Add the sour cream and whisk until combined.

Mash or beat potatoes with a mixer until creamy.&nbsp;Add the milk mixture and continue mixing until well incorporated. Transfer potatoes to a baking dish.

On a medium skillet, saute chopped bacon until golden brown. Sprinkle bacon over potatoes and top with shredded cheese.

Cover baking dish with foil and bake at 375˚F for 25 minutes. Remove foil and cook an additional 10 minutes, or until cheese melts and potatoes are hot.&nbsp;

Bring a large pot of water to a boil; add 2 tablespoons of salt. Place the potatoes in the pot and boil for 15-20 minutes or until potatoes are tender.

Drain the potatoes. Run the potatoes through the ricer and transfer them back to the pot. Alternatively you can skip the ricing step and simply mash the potatoes with a potato masher or mixer.&nbsp;

Stir in the milk, butter, sour cream and then add salt and pepper to taste. Stir in 1 cup of the cheddar cheese.

Preheat the oven to 350 degrees F. Place the potatoes into a 9 inch square pan or 2 quart casserole dish. coated with cooking spray. Top with remaining 2/3 cup of cheddar cheese.&nbsp;

Cover the pan with foil and place into the oven. Bake for 20 minutes. Remove the foil and add the bacon; bake, uncovered for an additional 20 minutes or until cheese is bubbly and potatoes are heated through.&nbsp;

Sprinkle the chives and parsley over the top and serve immediately.

These creamy mashed potatoes are loaded with bacon, sour cream, cheddar cheese, and green onions! It&#039;s an easy side dish idea that goes well with everything!

Loaded Mashed Potatoes

Cut the bacon into halves or thirds and fry in a large skillet over low heat while you proceed with the following steps below. Once crispy on each side, transfer to a paper towel lined plate. Roughly chop once cooled.

Add the sour cream and milk to a small bowl and whisk to combine. Set it aside and allow it to come to room temperature. It shouldn&#39;t be cold when added to the potatoes.

Peel the potatoes and cut into ¾-inch slices. Place in a large pot of cold water.

Prep Work

Slowly bring the potatoes to a gentle boil, do not boil rapidly. This ensures that they cook evenly and prevents them from falling apart. Once a soft boil is reached, add 3 teaspoons salt.

Cook for 25 minutes or until the potatoes are very fork tender. Remove from heat and drain well.

Cook the Potatoes

Return to the warm pot and add the butter. Let them sit for 3 minutes to allow most of the steam to escape and for the butter to melt.

Add the pepper to the potatoes and start mashing them. (Use a potato masher, not an electric mixer.) Gradually drizzle ¾ of the sour cream/milk mixture while you continue to mash. Don’t over mash or the consistency will become gluey.

Stir in a little more than half of the cheese, half of the bacon, and half of the green onions. Add the remaining sour cream/milk only if a slightly creamier texture is desired. Taste and add more salt/pepper if needed.

Transfer to a serving dish. Top with the remaining cheese. If desired, microwave for 30 seconds to melt the cheese on top. Top with remaining bacon and green onions and serve!

Mash and Serve

My Mom has made her version of this for years and the only difference is she adds little squares of Velveeta into the potatoes at the end. It's sooo good!

Divide evenly between the greased muffin tins.

Bake for 30-35 minutes until the tops are golden and the edges are crisp.

Let cool in the pan 5-10 minutes or until the muffins are cooled enough for you to pop them out easily.
