These are terrible directions. In step 3 you should said in the foil lined pan etc, I almost put chips in hot pan with meat.

I followed this recipe to the letter, I would never again mix refried beans with the ground beef. It made the tortilla chip soggy. It was awful. Next time I would layer the meat and cheese pop it in the oven then add toppings. Toast chips in oven and the use them to scoop up the beef cheese and toppings.

It turned out delicious! Had a 5hr card game for 5 men & still had leftovers- it definitely will feed more than described. However, I heated it at 400 degrees for about 6 minutes until the cheese melted. 425 degrees for 15 minutes is too high, too long.

Healthy Game Day Recipe Idea - Sheet-Pan Chicken Nachos

chicken thighs

cumin

garlic powder (optional)

salt

black pepper

8 cups of your favorite tortilla chips,

Monterey Jack cheese

black beans

tomatoes (sliced thinly, I used colorful cherry tomatoes)

fresh bell peppers (sliced thinly)

pickled Jalapeños (roughly chopped)

corn (I used drained and rinsed canned corn)

avocado

fresh cilantro leaves (as garnish)

radishes (sliced thinly (optional))

Mexican cheese

lime

Pre-heat the oven to 350 degrees.

Line a baking sheet with parchment paper and set aside.

Pat dry chicken thighs using paper towels.

Rub both sides of the thighs with olive oil.

Sprinkle them with cumin, garlic powder, salt and pepper.

Transfer onto the parchment-lined baking sheet and roast for 25-30 minutes or until thighs reach 165 degrees when a thermometer is inserted in the middle of a thigh.

Cover with a sheet of aluminum foil and set aside to cool for 5 minutes. Do not turn the oven off.

For the chicken:

Line another baking sheet with parchment paper.

Spread half of the chips onto the sheet.

Sprinkle half of the Monterey Jack cheese and half of the beans over the chips.

Place in the oven and bake until cheese melt, 8-10 minutes.

Meanwhile, shred the chicken.

Take the first layer of chips, cheese, and black beans out of the oven and top them off with the rest of the chips, black beans, half of the shredded chicken, half of the tomatoes, half of the bell peppers and half of the jalapeno peppers. Place it back in the oven for another 7-8 minutes.

For the chips:

Top it off with the rest of the chicken, tomatoes, and peppers.

Garnish it with cubed avocado, cilantro, and if using, sliced radishes and crumbled

queso fresco

Serve immediately with wedges of lime on the side.

How to Make Nachos Supreme
Preheat your Blackstone to medium heat. Apply a thin layer of your favorite cooking oil (recommend olive oil) to the griddle surface and let it get good and hot. When the griddle is hot and nearly smoking, add ground beef to the griddle. Cook the ground beef, breaking it up as you go, until it is no longer pink inside. Make sure to separate as much of the burger grease from the cooked burger as possible before adding the taco seasoning. Push the excess grease into the grease trap. Toss in a couple tablespoons of taco seasoning on top of the cooked burger. Add a squirt of water to help combine the ground beef and taco seasoning, if needed. Once the taco meat is cooked, place tortilla chips on a prepared baking sheet pan or serving dish. Do this by laying a piece of parchment paper or aluminum foil onto the baking sheet and spreading a single layer of tortilla chips across the full sheet pan. Top the tortilla chips with the hot ground beef mixture, and the shredded Mexican cheese blend. If desired place the whole sheet pan with the chips, burger and cheese onto the the hot Blackstone Griddle and cover with a dome lid for about 2 - 3 minutes to melt the cheese. By doing this you are creating an oven affect and making baked nachos.

What is the Best Way to Layer Nachos?
Layering nachos supreme is completely customizable. Sprinkle the toppings like diced bell peppers, chopped tomatoes, and of course, a dollop of sour cream. Crunchy shredded lettuce adds a nice touch to these towering nachos. Serve hot and make sure to have a variety of side that your guests will like.

Healthy Loaded Nachos

oz plant-based ground beef meat substitute

tbsp chili powder

cayenne

tsp cumin

tsp kosher salt

oz tortilla chips

oz shredded ‘mexican cheese’ blend

oz queso

red onion (diced fine (~½ small onion))

cilantro (chopped fine)

cherry tomatoes (cut in half)

jalapeno

guacamole

sour cream

Start by preparing your ‘ground beef.’ Heat a large skillet to medium and add olive oil. Once hot, add your onion and minced garlic, cooking for 3-5 minutes or until translucent.

Add your plant-based ground beef, followed by the chili powder, cayenne, cumin, and kosher salt. Cook until browned and cooked through, 6-8 minutes.

Preheat the oven to 400F and line a baking tray with parchment paper.

To the parchment-lined baking tray, add half of the tortilla chips. Sprinkle tortilla chips evenly with half of the ground beef mixture, 6oz of shredded cheese, and 6oz of queso. Top with the remaining half of tortilla chips, ground beef mixture, remaining 6oz shredded cheese, and 6oz of queso.

Move to the oven and bake at 400F until the cheese is melted and bubbling, 6-10 minutes.

Remove from the oven and add your toppings - red onion, cilantro, chopped tomato, jalapeno, guacamole, and sour cream dollops, spreading evenly over the top of nachos. Serve immediately and enjoy!
