Loaded Scalloped Potatoes

butter

garlic (minced)

tbsp all-purpose flour

chicken broth (low sodium)

heavy cream

salt (or

½ tsp pepper (or

⅛ tsp nutmeg (ground)

lbs potatoes (sliced 1/8 inch thin, I used Yukon gold

cheddar cheese (shredded)

bacon (fried and crumbled)

chives (chopped)

Preheat your oven to 400 F degrees.

Melt the butter in a saucepan or skillet over medium heat. Add the garlic and cook for 30 seconds until the garlic is aromatic.

Sprinkle the flour over the garlic/butter then whisk well until combined with the butter. Add the chicken broth and whisk until combined. It should look like a thick paste. Cook for another minute while stirring, then add the heavy cream and whisk until smooth.

Season with salt, pepper and nutmeg. Continue cooking for 2 more minutes until the sauce comes to a simmer and thickens. Remove the saucepan from the heat and set aside.

Start layering. Start with a spreading a couple ladlefuls of the sauce over the bottom of a 9x13 inch baking dish. Spread a third of the sliced potatoes over the sauce in an even layer (see video). Top with more of the sauce to cover the potatoes. Top with a third of the cheddar cheese and then a third of the bacon. You should have enough ingredients for 3 layers of potatoes. Continue layering with potatoes, sauce, cheese, bacon and repeat. Finally sprinkle with half the chives.

Cover with foil and bake for 45 minutes. Uncover and finish baking for for another 45 minutes or until the potatoes are fork tender.

Garnish with remaining chives and serve warm.

These loaded scalloped potatoes are the perfect side dish for holidays and everyday meals. They&#039;re layered with lots of cheese and bacon, and cooked in a cheesy sauce.

Loaded Scalloped Potatoes Recipe

unsalted butter

milk

½ tsp kosher salt

½ tsp pepper

nutmeg

cheddar cheese (divided)

bacon (cooked and crumbled)

Preheat

Preheat the oven to 350 degrees F. Spray a 2 quart baking dish with olive oil spray and set aside.

Boil

Place the potatoes in a large pot and cover with water. Bring to a boil over medium heat. Reduce the heat and simmer until the potatoes are just tender, about 8 minutes. Drain and set aside to cool.

Melt

Melt butter in a large saucepan set over medium heat. Add garlic and cook for 30 seconds, then stir in flour until well combined.

Whisk

Slowly whisk in chicken broth, cook for 1 minute, then stir in milk. Whisk until smooth, seasoning with salt, pepper, and nutmeg. Continue cooking for 1-2 minutes, until the sauce thickens. Remove the saucepan from the heat and stir in 1 cup of cheddar cheese until melted.

Layer

Spread ¼ cup of the sauce over the prepared baking dish. Arrange ⅓ of the sliced potatoes evenly over the sauce. Top with ⅓ of the sauce to cover the potatoes, then sprinkle with ⅓ cup of the cheddar cheese and ⅓ of the bacon. Continue layering two more times in that order with the remaining potatoes, sauce, cheese, and bacon and repeat. Sprinkle the rest of the cheese on top.

Bake

Cover with foil and bake for 25-30 minutes. Uncover and continue baking for another 5 minutes or until the potatoes are fork tender. Turn the broiler to high and brown the cheese, if desired.
