Lofthouse cookies

all-purpose flour ((270 grams))

unsalted butter (room temperature (113 grams))

sugar ((200 grams))

egg (room temperature)

sour cream room temperature ((60 grams))

tsp vanilla extract ((7.5 milliliters))

almond extract (optional)

butter room temperature ((113 grams))

sugar ((240 grams))

tsp pure vanilla extract ((5 milliliters))

tbsp Milk ((30 milliliters) plus more if needed)

Food coloring optional

Combine the flour, salt, baking powder, baking soda, and cornstarch in a bowl then whisk together and set aside.

Cream the butter and sugar until fluffy then beat in the egg, vanilla, and almond extract if using. Add the sour cream and mix until combined, scraping the bowl down as needed.

Add the dry mixture to the wet and mix on low until just combined. Use your spatula to scrape down the bowl and combine any errant flour. Shape dough into a disk then cover in plastic and chill for an hour.

Preheat oven to 375F. Roll the dough out to ¼ inch then use a 2 1/2-3 inch circular cookie cutter to cut the cookies, Reroll the scraps and cut the remaining cookies. Transfer cookies to parchment-lined baking sheets and bake at 375F for 8-9 minutes or until the cookies are just turning color on the bottom edge. Set aside to cool completely.

While the Cookies bake, cream the butter then mix in the powdered sugar, and vanilla. Drizzle in the milk while mixing on low then increase speed to high and beat until smooth. If using food dye, mix in a drop at a time until desired color is reached.

Top the cookies with a thin layer of buttercream and a smattering of sprinkles.

Easy Homemade Lofthouse Cookies

The BEST Lofthouse Sugar Cookies are soft and puffy cookie perfection. They are thick, cakey, sugar cookies smothered with sweet bakery-style frosting and tons of sprinkles.

Lofthouse Sugar Cookie Recipe

cake flour

all-purpose flour

sugar

butter (room temperature (1 stick))

butter-flavored shortening

tsp baking powder

tsp cream of tartar

tsp vanilla extract

tsp almond extract

milk

salt

blue food coloring

In the bowl of a stand mixer, cream sugar, butter, and shortening until light and fluffy, about 2 minutes on medium-high. Add vanilla extract, almond extract and the whole egg. Mix, then add the egg white and mix until combined.

In a small mixing bowl whisk together cake flour, all-purpose flour, baking powder, cream of tartar and salt. With mixing speed on low, gradually add dry ingredients until no flour pockets remain. Place dough in an air tight container and refrigerate for at least 3 hours.

Preheat oven to 375 degrees. Line two baking sheets with parchment paper or a Silpat baking mat, set aside.

Using a large cookie scoop (#20- approximately 3½ tbsp.), create balls of dough, lightly roll on a floured surface so that it covers the ball of dough completely. Press each ball of dough flat with the bottom of a glass so that it is ½&quot; thick and about 2½ wide. Place 6 cookies onto each prepared baking sheet. Place in oven and bake for 10-11 minutes (the cookies will still look soft in the centers, do not over bake) or until the cookies become firm on the edges. Remove and allow to cool for 3 minutes before transferring to a wire rack to cool completely.

Meanwhile, to make the frosting, in the bowl of a stand mixer fitted with the whisk attachment, cream butter until it becomes light and smooth. Add salt, food coloring, 2 tablespoons of milk and vanilla. With mixing speed on low gradually add powdered sugar. Once powdered sugar is incorporated, bring mixing speed up to high and beat for 2 minutes. Add more milk to reach the desired consistency. Frost onto cooled cookies and top with desired sprinkles.

Soft Baked Lofthouse Cookies

Combine butter and sugar in the bowl of a stand mixer fitted with the paddle attachment. Cream at medium speed for 2 to 3 minutes, or until light and fluffy. Scrape down the sides of the bowl, then beat in the eggs one at a time.

Add the vanilla and almond extracts and Greek yogurt and mix on medium speed for 2 minutes.

In a separate medium bowl, whisk flour, baking powder, baking soda and salt.

Add the flour mixture to the butter mixture and process at low speed just until no streaks of flour remain.

Chill for 30 minutes.

Preheat the oven to 350˚F and line two baking sheets with parchment paper.

Using a 2-tablespoon sized spring loaded cookie scoop, scoop about 12 cookies onto each prepared sheet pan. Roll them into even balls, then gently pat the tops down so you create a slightly flattened disc.

Bake for 10 to 12 minutes, or until lightly golden brown. Let cool on sheet pans for 1 minute, then transfer to cooling racks to cool completely. Repeat with remaining cookie dough.

While the cookies cool, make the icing. Place the butter in the bowl of a stand mixer fitted with the paddle attachment and beat at medium speed for 2 minutes. Add sugar, vanilla and 2 tablespoons of milk and beat until smooth, adding the additional milk as needed. You want a light and fluffy frosting that is thick, but spreadable. Once you reach the desired consistency, add food coloring and mix to combine, if desired.

Add 1 tablespoon of frosting to each of the cooled cookies, then add sprinkles.  Store frosted cookies tightly wrapped in the fridge.

Copycat Lofthouse Soft Frosted Sugar Cookies Recipe

unsalted butter, softened

Line several large baking sheets with parchment paper. Set aside.

In a large bowl, cream the butter and granulated sugar with an electric mixer on medium speed. Add the eggs, one at a time, beating until each is combined. Add the sour cream, vanilla and almond extracts and mix on low speed until smooth.

In a separate bowl, whisk together the dry ingredients (flour, baking powder, baking soda, salt). Then gradually add dry ingredients to the cake batter, while mixing at low speed until completely combined. Keep in mind, the dough will be a bit sticky. Lay out three large pieces of plastic wrap on the counter, then scoop of third of the batter onto each piece. Wrap up dough and gently flatten into rectangles about 1 1/2&quot; thick. Place in refrigerator to chill for about 2 hours or overnight.

Preheat oven to 425°F. Take dough out of fridge. Place on floured countertop, then sprinkle more flour onto dough. With a rolling pin, roll dough out to 1/4&quot; thickness. Using a 2 1/4-inch round cookie cutter, cut out circles and transfer to prepared baking sheets. Bake cookies for 7-8 minutes, or until slightly golden on the edges. Let them cool completely before frosting.

For the cookies

Cream softened butter on medium speed with an electric mixer or stand mixer. Beat for 3 minutes until smooth and creamy. Add powdered sugar, salt, cream, and vanilla extract with the mixer running on low. Increase to high speed and beat for 3 minutes. Add pink food coloring gel, if desired. Beat until completely combined.

Place frosting in a large pastry bag fitted with a large round tip such as #20. Pipe in a circle motion onto cooled cookies, then smooth it out with an offset spatula. If you&#39;re in a hurry, just spread it on with a butter knife. Add sprinkles, if desired. Let the frosting set for about an hour. Store cookies in an airtight container for up to a week. Or freeze for up to a month.

In a medium bowl, whisk 5 cups of flour, baking soda, and baking powder; set aside.

In the bowl of a stand mixer with the paddle attachment, cream the butter and granulated sugar at medium speed until light and fluffy, about 3 minutes. Scrape down the sides of the bowl with a rubber spatula as needed. Add the eggs, one at a time beating until each is incorporated. Add the vanilla and sour cream and beat at low speed until combined.

Add the dry ingredients and beat at low speed until just combined, about 30 seconds, scraping down the bowl as needed. Dough needs to obtain the right consistency for rolling, so add additional flour, 1/4 cup at a time, until this is achieved (up to 1 cup more flour).

Divide dough into two sections. Flatten into rectangles about 1 1/2 inches thick, then wrap with plastic wrap. Chill in the refrigerator overnight.Preheat the oven to 425 degrees F. Line 2 large baking sheets with parchment paper or spray them with nonstick cooking spray, set aside.

Generously flour a work area and rolling pin. With a rolling pin, roll the dough out to 1/4-inch thickness. Using a 2 1/2-inch round cookie cutter, cut out circles and transfer to a baking sheet. Bake for 7-8 minutes, until pale golden. Immediately transfer cookies to a wire rack to cool.

For the cookies:

To make the frosting, in the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and vanilla. Slowly beat in the powdered sugar. Once smooth and creamy, add in heavy cream, 1 tablespoon at a time until the desired spreading consistency is achieved.

Once cookies have cooled completely, frost and add sprinkles. Allow frosting to set, then store in an air-tight container. Let cookies sit overnight before serving to allow the flavors to develop.
