Learn how to make your own Cantonese-style Lo Mai Gai (糯米雞) at home! 

Lo Mai Gai (糯米雞)

lb glutinous rice

water

lotus leaves

salty egg yolks

Chinese sausage

oz chicken drumstick meat

oz char siu

mushrooms

red shallots

cornstarch

tbsp Kikkoman oyster sauce

tbsp Kikkoman soy sauce

0.5 tsp Kikkoman tamari

chicken bouillon

tsp sugar

salt

tsp Kikkoman sesame oil

olive oil

0.5 tbsp Kikkoman oyster sauce

tsp Kikkoman soy sauce

Prepare lotus leaves

Soak the lotus leaves in warm water for 2 hours. Cut into quarters and set aside.

Prepare glutinous rice

Wash the rice three times, transfer to the rice cooker with water and cook. When the rice is cooked, loosen the rice by running chopsticks through it.

Boil salted eggs

Boil the salted eggs for 2 minutes, transfer them into a bowl of cold water.

Prepare drum sticks

To remove the bone from the drumstick and cut the meat into bite-size cubes, transfer to a bowl, and add cornstarch and water.

Prepare other ingredients

Rehydrate the dried shiitake mushrooms in warm water for 10-15 minutes. Save the water for later!

Cook filling

Heat up the wok and oil. Cook the chicken for 30 seconds with the heat off, and then set the stove back to high heat. 

Add sauces to filling

Add oyster sauce, light soy sauce, tamari, chicken bouillon, sugar, and salt.

Peel & cut salted eggs

Peel the eggs and let them completely cool before gently peeling the egg whites off to expose the egg yolks.

Add sauce to rice

Combine the juice from soaking the shiitake mushrooms with water, oyster sauce, light soya sauce, and oil. 

Assemble Lo Mai Gai

Place two quarters of lotus leaves one on top of the other having the wider parts of the leaves overlapping each other and the narrow ends are at 12 o'clock and at 6 o'clock. Sandwich the fillings between two small portions of rice and shape into a rectangle.

Steam Lo Mai Gai

Place the lo mai gai seam down onto the steamer's tray. Arrange them into a single layer. Once the water is boiling, steam for 20 minutes.

Marinated chicken pieces along with lotus seeds, ginger, goji berries, mushrooms, scallions are wrapped in lotus leaves and then steamed to give you an aromatic and super easy chicken dish. The recipe can be made with Instant Pot too.

Steamed Chicken in Lotus Leaves ( 荷 葉 蒸 雞)

lb boned-in chicken wings

Tbsp oyster sauce

soy sauce

Tbsp shaoxing wine

tsp sesame oil

tsp salt

tsp white pepper

shiitake mushrooms

lotus seeds

Tbsp goji berries

ginger

scallions

Place the chicken pieces in a large bowl or zip lock bag. Add the marinade ingredients and toss to mix to make sure the marinade coats the chicken. Let the chicken marinate for at least 30 minutes to overnight if you have the time

Marinate the chicken:

Soak lotus seeds in hot boiling water for 10 minutes or so until they are soft. Do the same with the mushrooms and soak until they are soft. Goji berries only need to be soaked briefly for 2-3 minutes until they are plump. Discard the soaking water

Soak lotus seeds, mushrooms, and goji berries:

Soak the lotus leaves in hot water until they are soft and pliable. Wipe the leaves dry. Trim off the tough spiny bottom of the leaf so you can fold it easier later

Prepare the lotus leaves:

Place half of the chicken on top of lotus leaves, top with half of the other ingredients like goji berries, lotus seeds, mushrooms, scallions and ginger slices/strips

Fold two sides of the leaf up and then fold them down like a parcel. Repeat with another parcel. Place the parcel on top of a plate

Wrapping:

Set the bowl in a steamer and steam over high heat for 25-30 minutes, until the chicken pieces are cooked through and infused with the fragrance of the leaves

Steaming using steamer:

Pour 1 cup of water into the inner pot of Instant Pot. Set the trivet in there. Place the parcel that you place on a plate on top of the trivet. Close the lid. Press &quot;pressure cooker&quot; and make sure it&#x27;s on &quot;high pressure&quot;. Set timer to 10 minutes. Wait 5 minutes and then fully release pressure

Pressure cook with Instant Pot:

Unwrap the parcel just before you are ready to serve them with rice as part of a multi-course meal
