This Chocolate Italian Love Cake starts with a boxed cake mix for an easy dessert recipe that only looks fancy!

Easy Chocolate Italian Love Cake

chocolate

sugar

pure vanilla extract

chocolate pudding mix

frozen whipped topping, thawed ((such as Cool Whip))

Preheat oven to 350 degrees F and spray a 9x13 inch pan with nonstick spray.

In a large bowl, mix together cake batter according to package instructions.

Pour the cake batter into the prepared baking dish. Spread to fill the pan evenly. Set aside (do NOT bake yet).

Prepare the Cake Batter:

In another bowl, use an electric mixer to beat together ricotta cheese, eggs, sugar, and vanilla extract until smooth.

Carefully pour the cheese mixture evenly over the top of the cake batter. Spread to cover cake as best you can (the layers will switch during baking).

Bake the cake for 1 hour.

Remove from oven and allow to cool completely before frosting.

Prepare the Filling:

To make frosting, whisk together pudding mix and milk until combined and slightly thickened (about 1-2 minutes). Carefully fold the whipped topping into the pudding until combined.

Spread frosting on top of cooled cake. Cover and refrigerate at least 6 hours before serving.

Prepare the Frosting:

Italian Love Cake is an Italian cake that America has fallen in love with. This is a ricotta base, chocolate cake layer and then topped with a chocolate pudding whipped topping. A must make layered cake.

Preheat the oven to 350 degrees. Then grease your 9x13 baking dish with cooking spray. Set it to the side.

Grab an electric mixer and add your ricotta cheese, sugar, and vanilla into a mixing bowl. Mix for a few minutes until smooth, then slowly work in the eggs.

Ricotta Layer

In a medium bowl you can mix up the cake mix, oil water and eggs. Whisk well and make sure the batter is smooth.

Pour the cake batter into the pan.

Then carefully pour the ricotta mixture over the chocolate. Make sure to pour it all over the cake.

Bake for 1 hour to 1 hour and 10 minutes or until the cake is fully baked all the way through. The cake will be a little jiggly in the center.

Once the cake is done, cool to room temperature.

In a bowl you will add your pudding, and milk. Mix well until it is fully mixed.

Allow the pudding to rest for 2-3 minutes.

Then fold in the whipped topping.

Spread the frosting over the cake once it is cooled. Then cover and refrigerate for 4 hours or until you are ready to serve.

You're Italian Love cake sounds delicious. So I have wanted to make this for family. 
But the pictures you have of it, shows the Ricotta layer on the bottom. And the cake in the center. But the directions you have says to put the chocolate cake layer on the bottom, not the cheese!? So I'm confused as to which way I'm suppose to go with to start my dessert.????

Soft And Moist Persian Love Cake

flour (all purpose)

almond meal (not almond flour)

Preheat the oven to 325°F. With a stand mixer using the whisk attachment or an electric hand whisk, blend the butter, sugar, eggs, and yogurt for 1-2 minutes on medium speed.

Add the cardamom, vanilla, and rose water, whisking for 30 seconds on medium speed.

Introduce the flour, almond meal, and baking powder, continuing to whisk for 1 minute. Begin at low speed, then progress to medium and high speeds. Midway through, scrape down the sides with a spatula, ensuring thorough mixing for another minute until well combined. Whisk again for a couple of minutes until you have a smooth batter.

Prepare a 6-inch cake pan by greasing and lining it with parchment paper. Pour the cake batter into the pan, smoothing the top with a spatula. Place the cake in the oven on the middle or lower shelf at 325°F for 60-70 minutes. Test for doneness by inserting a skewer or fork; it should come out clean.

Once baked, immediately remove the cake from the pan to prevent further cooking. Let it cool before slicing the top to achieve a level surface.

For the glaze, combine powdered sugar, rose water, and milk. Carefully drizzle the glaze over the cake. Adorn with dried rose petals and chopped pistachios before serving.

I made this cake for my birthday recently and it's absolutely divine! I was a little concerned that the texture would be too grainy because of the almond flour, but it wasn't at all - very similar to a poundcake, with a fine tight crumb.  The size of the cake is perfect and the prep is a breeze. 
I'm constitutionally incapable of not tinkering with a recipe, so I did add some lemon zest to the cake and some saffron and nutmeg to the glaze. I will definitely be making this cake again soon.  Thank you for this delicious and reliable recipe!

This turned out perfect! I’ll be using these measurements  and recipe for my basic vanilla cake from now on! Perfectly moist and light! I didn’t have a circular pan available so made in a larger loaf tin and it was super!
