I used frozen Tyson Any’tizers Homestyle Chicken Fries. Diced up 3-4 at a time. Was quick and easy.

Forgot to bread the chicken and it was still great! Will probably reduce the cheese next time around.

Used cooked chicken rather than breaded to make it GF and omitted the last cup of mozzarella cheese as they are plenty cheesy without it. Just sprinkled a little mozzarella and parm on top and broiled at the end of baking time. Husband loves them

A really easy low-fat, low-calorie aubergine recipe with delicious umami flavours. This dish is so rich and meaty, it's hard to believe it's vegan!

Miso aubergines

aubergines,

vegetable oil,

brown miso

giant couscous

red chilli, thinly sliced

½ small pack coriander, leaves

Heat oven to 180C/160C fan/gas 4. With a sharp knife, criss-cross the flesh of the aubergines in a diagonal pattern, then place on a baking tray. Brush the flesh with 1 tbsp vegetable oil.

Mix the miso with 25ml water to make a thick paste. Spread the paste over the aubergines, then cover the tray with foil and roast in the centre of the oven for 30 mins.

Remove the foil and roast the aubergines for a further 15-20 mins, depending on their size, until tender.

Meanwhile, bring a saucepan of salted water to the boil and heat ½ tbsp vegetable oil over a medium-high heat in a frying pan. Add the couscous to the frying pan, toast for 2 mins until golden brown, then tip into the pan of boiling water and cook for 8-10 mins until tender (or following pack instructions). Drain well. Serve the aubergines with the couscous, topped with the chilli and a scattering of coriander leaves.

Hot smoked salmon with new potatoes & watercress

tbsp white wine or rice wine vinegar

baby new potatoes

buttermilk

½ tbsp low-fat mayonnaise

tbsp horseradish

fine green beans

In a large bowl, toss the onion with half the white wine vinegar and some salt. Set aside.

Boil the potatoes in a pan of salted water until tender. Drain well and put back in the pan to steam-dry for a few mins. Tip into the bowl with the onion and gently toss together so that the potatoes absorb the vinegar. Season and leave to cool.&nbsp;

In a small bowl, mix together the buttermilk, mayonnaise, remaining vinegar and the horseradish. Add some salt and fresh ground pepper, and mix well. Toss the potatoes in the mixture.

Boil the beans for 1 min in salted water, drain, rinse in cold water and dry. Divide the potatoes between two plates and top with the apple slices, beans, salmon and a large handful of watercress.

It's a wrap! A speedy supper with plenty of spice that's low in calories - the perfect midweek meal

Heat the oil in a large frying pan over a medium heat. Add the chicken, brown on all sides, then remove. Add the onion, garlic, ginger and a pinch of salt. Cook for 5 mins or until softened.

Increase the heat to high. Return the chicken to the pan with the spices, tomato purée, chilli and lemon juice. Season well and cook for 10 mins or until the chicken is tender.

Divide the chicken, red onion, chutney, herbs and yogurt between the four warm rotis. Roll up and serve with plenty of napkins

5 Ingredient Coconut Flour Waffles

eggs

almond milk (or milk of choice)

tbsp unsweetened almond milk (or milk of choice)

coconut flour

tsp baking powder

cinnamon

Heat a waffle maker and spray the inside with nonstick cooking spray liberally. Do not use butter or coconut oil or the waffles will stick.

Place eggs in a mixing bowl with almond milk (use 1/4 cup of ALMOND milk PLUS 2 tablespoons of ALMOND milk - this is not an error!) and whisk together until smooth.

Fold in coconut flour (measured properly), baking powder and cinnamon until combined. Do not over mix. The batter should be thick. Note - if you overmix it will yield smaller or fewer pancakes.

Transfer the batter to the waffle maker and cook 10 minutes. DO NOT REMOVE or OPEN TOO SOON OR WAFFLES WILL FALL APART. All waffle makers are a different, mine cooks quickly so you may need to cook yours longer than 10 minutes.

Carefully lift the waffle from the waffle maker with a small spatula and transfer to a plate while you cook the next one. It&#39;s very important you DO NOT prematurely remove the waffle from the maker or flip the waffle or it will fall apart. Note, you will need to add more cooking spray before adding the remaining batter.

The recipe makes two large waffles (my waffle maker is large). One serving equals a half of a large waffle.

Heat the oil in a wide, heavy-based pan (with a lid) over a medium heat, add the onions and cook for 10 minutes until softened. Add the beetroot and cook for 5 minutes, then put the fish fillets on top of the vegetables in an even layer. Cook for 5 minutes more.

Meanwhile, mix the crème fraîche, horseradish and yogurt in a bowl until smooth. It should be a fairly runny sauce so you might need to add 3-4 tbsp water to loosen.

Slightly reduce the heat under the fish and pour the creamy yogurt mixture over the fillets. Cover with a lid and continue cooking for 8-10 minutes until the fish is just cooked through. Sprinkle over the herbs, grind over a little black pepper and serve with creamy mashed potato.
