These low carb beef tamales use almond flour in place of corn masa harina which lowers the carb count to 4g net carbs.

Low Carb Keto Beef Tamales

corn husks

almond flour

flaxseed meal

butter

water

salt

extra virgin olive oil

beef

chili powder

oregano

paprika

cumin

black pepper

  Add the corn husks to a pot of hot water and use a plate to keep the husks underwater.  Cook over medium heat to keep the water hot.  Do not boil.  When it gets close to simmering, lower the heat.  You just want the water to be hot.  After 30 minutes, remove the cornhusks and dry them off.

=&#8221;instruction-step-2&#8243;>2.  Heat the olive oil over high heat in a large skillet.  Add ground beef and cook until completely browned.

instruction-step-3&#8243;>3.  In a small bowl, mix together chili powder, oregano, paprika, cumin and salt.  Add to the ground beef and stir to coat.

struction-step-4&#8243;>4.  In a medium sized bowl, microwave water and butter for the masa harina.  Mix with almond flour, flax seed meal and salt.

ruction-step-5&#8243;>5.  Lay out one of the corn husks.  Add 1/8 of the masa harina to the corn husk and form into a rectangle along the longest edge.

ction-step-6&#8243;>6.  Add 1/8 of the seasoned ground beef in the middle of the rectangle.

tion-step-7&#8243;>7.  Sprinkle 1/8 of the shredded cheese on top.

ion-step-8&#8243;>8.  Bring the edges of the corn husk together so that the filling folds over on itself.  Roll the corn husk around itself.  Fold it in the middle, leaving the long end open.

-step-9&#8243;>9.  Cut one of the cornhusks into thin strips and use one to tie together the tamale.

step-10&#8243;>10.  Repeat the process with the remaining 7 corn husks.

tep-11&#8243;>11.  Add to a steam basket and steam, covered for 1 hour.

ep-12&#8243;>12.  Allow to cool until cool enough to handle.  Unwrap the corn husks and enjoy.  It&#8217;s best with salsa verde or chili sauce.

I loved these tamales.  What a good idea to use almond flour instead of corn.

I made them with pull pork left over and almond flour because I'm a Keto lover. They are Delicious, easy and thank you very much for sharing.

This is a recipe that replicates the Masa Harina in tamales with a fat-head type of dough. Since going Keto I have missed my Christmas tamales. I have not included the filling in this recipe because the choices are endless and many people already have a favorite. But I will add some suggestions for meat fillings in the post tips.

Low Carb Tamales Recipe

Almond Flour

tbsp Psyllium Husk Powder

Mozzarella

lard (*or fat of choice. See post tips

tsp baking powder

tsp corn extract (*to taste. See post tips

Cup Broth (Boiling)

Soak

Soak 20 corn husks in hot water to soften while you are getting the dough ready. See post tips if you haven&#x27;t made tamales before.

Mix the almond flour, pysllium husk powder and baking powder together with a fork. Make sure you don&#039;t have any lumps.

Add boiling broth to the dough and mix. It will look like peanut butter. Next, add fat and corn extract to the dough and mix in.

Melt

Melt your shredded mozzarella, either in the microwave or on low on the stove.

Knead

Add cheese to almond flour mixture and knead until fully incorporated. This takes a couple of minutes. Knead until you have a dough. Keep going...it&#039;ll get there. It wont look like traditional masa but it will look like dough.

Divide dough into 20 evenish sized balls.Take a chunk of the dough and pat with (gloved or oiled hands) in a rectangle shape about 1/4 inch thick on corn husk one inch from edges.

Top with 2 tablespoons or so of whatever filling you are using, remembering to leave an inch on all sides for rolling.

Roll

Roll the husk like a burrito. Make sure you are rolling one side of the dough into the other so that the dough is sealed on all sides around the filling.Take the unused bottom portion of the husk and fold it upwards towards the tamale.Use a piece of the corn husk to make a tie around the middle of the tamale. This will help it keep its shape so it won’t unfold.

Steam

Once you’ve completed all of the tamales, place them standing upright in a steamer and steam for approx 75 to 90 minutes. See post tips in case you do not have a tamale steamer.

Serve

You will know the tamales are done when they feel slightly firm. Remember, this is a cheese based fat-head dough and the flavor is great. But they will be easier to remove from corn husks once they cool slightly. If re-heating, remove husk and then microwave for 20-30 seconds until hot.

Chill

These keep in the fridge for 5-7 days and can easily be frozen and thawed for snacks anytime.
