Autumn Harvest Collard Green Rolls

collard green leaves

brown rice

butternut squash

cranberry

Bring a large pot of water to a boil. Remove and discard thick stems from collard greens and place leaves in boiling water. Blanch for about 2 minutes or until just tender. Gently remove leaves from water and drain in a colander.

In a large bowl, toss together rice, acorn squash, dried cranberry and pecans. Season to taste with salt and pepper and set aside.

Lay a collard leaf on a work surface and top with about 2 tablespoons of shredded carrot followed by 1/4 cup-1/3 cup of rice mixture depending on the size of the leaf. Roll up, starting with the large end of the leaf and rolling it over the filling, tucking in the ends, like a burrito. Repeat with remaining leaves and filling.

To make the cranberry sauce, combine sugar, cranberries, cinnamon and salt in a medium saucepan and bring to a boil. Reduce heat and simmer for about 10 minutes, until cranberries begin to pop. Remove from heat and let cool (sauce will thicken). Stir in orange sauce, if using.

Transfer sauce to a food processor. Puree until smooth. Serve with collard rolls.

Low-carb Lettuce Wrap Sandwich

iceberg lettuce

mayo

yellow mustard

Prosciutto

meat chicken breast

cucumber

cherry tomatoes (cut in half)

parchment paper (about 15″ x 15″)

On a cutting board, place the parchment paper. Layer 5 to 8 lettuce leaves (or any other green leave you prefer) in the middle of parchment paper and the sides of the lettuce leaves should be on top of each other leaving no space between the lettuces. Layer the topping by spreading first the mustard and mayo.

Then, add Prosciutto and the slices of deli meat (ham and chicken breast), slices cucumber and cherry tomatoes.

Roll the lettuce wraps by using the parchment as your base.  Roll the lettuce wrap as tight as possible.

Halfway through rolling, fold the edges of the wraps towards the center, and continue rolling like a burrito. When it is completely wrapped, roll the remainder of the parchment around the lettuce.

Using a knife, slice the lettuce wrap and enjoy!

Heat the olive oil in a nonstick frying pan over medium heat. Pour the egg mixture into the pan and spread it out evenly.

Cook for about 3 minutes until the egg mixture is completely set, breaking up any air bubbles that form. Gently slide a spatula under the edges of the egg mixture to flip. Slide the cooked egg wrap onto a plate to allow it to cool slightly.

To make the avocado spread, mash the avocado, garlic, lemon juice, salt and pepper in a small bowl.

Spread the mashed avocado over the entire egg wrap, top it with arugula, add sliced tomatoes and feta cheese. Roll it up tightly and then slice in half. Enjoy immediately!
