You can't beat a classic cake - and Mary's crowd pleasing chocolate gâteau makes a wonderful make-ahead dessert for special occasions.

Mary's Black Forest gâteau

150 grams/5½oz caster sugar

grams/3½oz self-raising flour, sifted

grams/1¾oz cocoa powder, sifted

750 milliliters/1⅓ pint double cream, whipped

150 grams/5½oz white chocolate

250 grams/9 ounces plain chocolate (about 46% cocoa solids)

I just can’t stop making this. A lover of all cheesecakes, in every one of their manifestations, I had – I must admit – neither eaten nor heard of this until a few years ago. It is, I should say, very easy to make. There’s no crust, it’s just a wodge of tangy cheesecake that, although burnt on top, is only barely set in the middle. The hard thing is learning to take it out of the oven when it feels undercooked.

Basque burnt cheesecake

full-fat cream cheese,

caster sugar

free-range eggs,

300 milliliters/10fl oz soured cream,

¼ tsp fine sea salt

cornflour

blackberries

grams/½oz hard pure liquorice pellets

90 grams/3¼oz caster sugar

fine sea salt (optional)

The smooth, creamy liqueur gives this celebration cheesecake the wow factor. Top with grated chocolate and a dusting of cocoa.

Irish cream and chocolate cheesecake

250 grams/8¾oz digestive biscuits, crushed

cream cheese

milliliters/1fl oz Baileys

milliliters/3½oz icing sugar

300 milliliters/10½oz double cream, whipped

Here’s an easy molten chocolate pudding that's a real crowd-pleaser. The chocolate sauce gets poured on the top, but miraculously ends up on the bottom. How do they do that?


Chocolate self-saucing pudding

175 grams/6 ounces unsalted butter,

300 grams/10½oz soft light brown sugar

free-range eggs, beaten

tsp vanilla extract

tsp bicarbonate of soda

Oh boy! Chocolate, cheesecake – what’s not to like? And everyone knows that Belgian chocolate is the best in the world. Just thinking about this makes us weak at the knees – not one for the faint hearted.

full-fat cream cheese

200 milliliters/⅓ pint soured cream

sunflower oil,

300 grams/10½oz chocolate oat biscuits

butter, melted

Belgian chocolate truffles

white chocolate, for grating, or icing sugar

A lovely light gluten-free cheesecake with a creamy lemon filling, an amaretti biscuit base and a hefty dose of amaretto liqueur. 
With only a handful of ingredients, it's a fuss-free gluten-free dessert that everyone can enjoy.

grams/½oz softened butter, for greasing

grams/1½oz gluten-free crunchy amaretti biscuits

free-range eggs

100 milliliters/3½fl oz double cream

lemon, zest only

tbsp amaretto liqueur

This is one of those dark, squidgy-bellied chocolate cakes that I turn to gratefully when I have friends over to supper; a gratitude that is always reciprocated. The mixture of ground almonds and amaretto gives a marzipan kick, balancing the bitterness of the chocolate. The amaretti cream alongside brings both smoothness and a fine honeycomb crunch to the velvetiness of the cake. 

Equipment: You will need a 20cm/8in springform cake tin.
