White Chocolate Cranberry Cookies

unsalted butter, softened

brown sugar

sugar

vanilla extract

all-purpose flour

baking soda

dried cranberries, chopped

white chocolate chips

macadamia nuts, chopped

Preheat the oven to 350 degrees F. Line 2 baking sheet with parchment paper. 

With an electric mixer, cream the butter and both sugars together until smooth. Add the vanilla and egg, mixing well. Sift together the flour and baking soda. Spoon the flour mixture gradually into the creamed sugar mixture. Stir in the cranberries, white chocolate chips and macadamia nuts. Drop by heaping spoonfuls, about 2 tablespoons, onto the prepared baking sheets, 2 inches apart. Bake one sheet at a time until lightly golden on top and the edges are set, 12 to 15 minutes. Cool on the sheet about 5 minutes, and then transfer to a wire rack to cool completely. Store in an airtight container for up to 2 weeks.

The dough is very good - cookies came out thin and crispy if that’s how you like them! I used dried cherries, espresso chocolate chips, and crushed chocolate covered espresso beans in mine.

Just made these. 2nd batch of cookies this week. Would definitely add a pinch of salt when mixing the dry ingredients. But they’re delicious either way. Thank you Trisha! You’re amazing’

I changed it up a bit by adding 1/2 cup of oats and reducing the flour from 1 1/2 cups to 1 cup. Turned out perfect and nice and chewy. I also flatten cookies a little bit before putting them in the oven as I always do at a higher altitudes (less air pressure) and they were ready to remove in 11 minutes at 350°F
