Learn how to make Madeleines like a pro! This foolproof recipe requires no fancy technique and no resting period, but makes flawless cookies (/butter cakes!) every time! Includes a how-to video!

Madeleines (the Best, Easiest Recipe, with Video!)

unsalted butter

all-purpose flour

eggs (room temperature)

sugar (100 grams)

Tablespoons light brown sugar (firmly packed)

vanilla extract

salt

all-purpose flour ((155 grams))

Preheat oven to 375F (190C) and whisk together 1 Tablespoon melted butter and 1 ½ teaspoons flour. Use a pastry brush to lightly but thoroughly grease every cavity of your madeleine pan. Set aside.

In a small heatproof bowl, melt remaining 10 Tablespoons of butter. Set aside to cool.

In a large bowl, combine eggs, sugars, vanilla extract, and salt. Whisk vigorously until thoroughly combined (about 30 seconds).

Sift flour into the egg mixture, about ⅓ of the flour at a time, gently stirring into egg mixture after each addition.

Drizzle cooled melted butter around the edge of the batter and add zest, if using. Gently fold into batter using a spatula until ingredients are thoroughly combined (but do not over-mix).

Drop batter by heaping Tablespoon into prepared pan.

Transfer to center rack of 375F (190C) preheated oven and bake for 9 minutes or madeleines are light golden brown and spring back when lightly touched. Remove to a cooling rack to cool immediately.

If your madeleine pan did not hold all of the batter, allow the pan to cool before re-brushing with butter/flour mixture and refilling with batter and baking your next batch.

If desired, sprinkle madeleines with additional powdered sugar or dip in melted chocolate before serving.

France-based food writer Debora Robertson&#8217;s recipe for lemon madeleines with gin and dubonnet sorbet is a delicious Anglo-French dessert created to celebrate the Queen&#8217;s Jubilee. Check our our madeleines with lemon and herb drizzle.

Lemon madeleines with gin and Dubonnet sorbet

For the madeleines

unsalted butter,

plain flour,

eggs

caster sugar

½ tsp baking powder

Finely grated zest 1 unwaxed lemon

For the glaze

½ lemon (about 25 milliliters)

icing sugar

For the sorbet

orange (about 100 milliliters)

tbsp Dubonnet

You’ll also need

To make the madeleines, brush the tin or tins well with melted butter. Dust with flour, tap out the excess, then chill.

Whisk the eggs, sugar and a good pinch of salt until the mix is light and fluffy. Fold in the 100g butter. Sift the 100g flour and the baking powder into another bowl, then whisk in the lemon zest. Fold the flour mix into the egg mixture using a large metal spoon until just combined. Cover and chill for at least 2 hours, and up to 8 hours.

Heat the oven to 170°C fan/gas 5. Use 2 teaspoons to drop the batter into the holes in the tin to about three quarters full. Bake small ones for 8-9 minutes (12-13 minutes for large ones) until risen and golden. Whisk the lemon juice and 2 tbsp water with the icing sugar. When the cakes are cool enough to handle, use a fork to dip them into the lemon glaze, then put them on a wire rack, scalloped-side up. Serve warm with scoops of the icy sorbet.

To make the sorbet, put 300ml water and the sugar in a pan on a medium heat and stir until the sugar has dissolved. Pour into a bowl to cool, then chill. Mix in the rest of the ingredients, apart from the egg white, then churn in an ice cream maker (or see tips). When it looks almost done, whisk the egg white until just frothy and add to the mix – you don’t have to add this, but it helps to stabilise the mixture and makes it smoother. Scrape into a lidded plastic container and freeze until you’re ready to eat it.

These delightful and tiny light as air cakes will melt in your mouth.

Melt the butter either in your microwave or in a small pot over medium heat. Browning the butter will add a lovely depth or flavor to the cakes but is of course optional. Once melted or browned pour the butter into a bowl and allow to cool.

Sift the flour, salt, and baking powder into a bowl then whisk together and set aside.

Add the eggs and sugar to the bowl or your stand mixer fitted with a whisk attachment or a large bowl if using an electric hand mixer. Beat on high until the mixture is a light yellow color with a thick silky texture, about 8-9 minutes. You&#039;ll see the beater leave trails when it&#039;s ready. Mix in the vanilla and lemon zest toward the end.

Fold the dry ingredients into the egg mixture and mix until just combined. You can sift the flour mixture into the eggs while you fold to avoid getting lumps or over-mixing the delicate batter.

Drizzle the butter into the batter and gently mix until just combined.

Cover and chill the batter as well as the buttered tins for 1 hour then scoop one tablespoon of batter into each scallop-shaped well. Bake at 350F 8-10 minutes.

Serve with a light dusting of powdered sugar.
