(220 grams) caster sugar

(185 grams) plain flour, sifted

tsp bicarbonate of soda, sifted

Vanilla ice cream, to serve

(250 milliliters) pure (thin) cream

unsalted butter, chopped

(110 grams) caster sugar

tbs brandy

Malva Pudding is a traditional South-African, sticky, sweet, divine dessert and unbelievably easy to make using all standard pantry ingredients.

Malva Pudding

Caster Sugar

Eggs

TB Smooth Apricot Jam (very smooth, no lumps)

Flour

t Bicarbonate of Soda

Salt

TB Unsalted Butter

t White Vinegar

Milk

Cream ((whipping cream – but do not whip))

Unsalted Butter

Sugar

Water

Pre-heat the oven to 180 deg C (350 deg F) – Spray a 20 x 30cm ( 9 x 13 inch ) oven dish with cooking oil

Beat the Caster Sugar and Eggs together until fluffy – add the Apricot Jam and beat until smooth

Sift together the Flour, Baking Soda and Salt in a separate bowl

Melt the Butter and add the Vinegar and Milk – stir to combine

Add the Milk and Flour mixtures alternately to the Egg mixture – beat until just smooth

Pour batter into the prepared oven dish and bake 40 – 45 minutes (it will go quite dark when done)

Just before the pudding finish baking – heat the Cream, Butter, Sugar and Water over medium heat until the Butter is melted and the Sugar has dissolved

As soon as the pudding is out of the oven – pour the sauce over the hot pudding and let stand 5 – 10 minutes before serving

This Malva Pudding recipe is a sweet and moist cake recipe straight from South Africa made with incredible apricot jam and heavy cream.

South African Malva Pudding Recipe

(6floz/180 milliliters) whole milk

(3 ounces 85 grams) dark brown sugar

apricot jam, (strained)

(1 ounces 30 grams) butter, (melted)

apple cider vinegar

(7½oz/213 grams) all-purpose flour

baking powder

baking soda

salt

½ cup (4floz/120 milliliters) heavy cream

(4floz/120 milliliters) whole milk

½ cup (4 ounces 115 grams) butter

½ cup (4 ounces 115 grams) sugar

Preheat the oven to 350°F (180°C) and butter an 8-inch (20cm) square baking dish.

In a medium mixing bowl, whisk the milk, brown sugar, eggs, apricot jam, melted butter, and vinegar until fully combined.

In another bowl, whisk together the flour, baking powder, baking soda and salt, and then combine with the wet ingredients until thoroughly combined.

Pour into the prepared baking pan and bake for 30-40 minutes, until a knife inserted in the center comes out clean.

Just before the pudding is done, make the sauce: in a saucepan over medium heat combine the cream, milk, butter, sugar, and salt and heat until the butter is melted and the sugar is dissolved.

Once the pudding is done, poke holes all over the hot pudding with a skewer and then pour the warm sauce over the pudding. Allow resting for a minimum of 30 minutes.

Serve warm with a scoop of vanilla ice cream. Store leftover pudding in the refrigerator in an airtight container for up to 3 days. Reheat before serving, either in a 300°F (150°C) oven or in the microwave.

Tried this for the first time after hearing, Virat Kohli - Indian cricketer talking about this, and I must say it turned out very well. I can make a bit more of the sauce as it was totally absorbed into the cake. Thanks for sharing this amazing recipe.

South African Malva pudding is rich, syrupy and absolutely delicious served with quick and easy frozen custard. The ultimate dessert.

South African Malva Pudding

butter

sugar

apricot jam/apricot preserves

white vinegar

flour

milk

bicarbonate of soda (baking soda)

water

golden syrup

unsalted butter

vanilla extract

To make the pudding, pre-heat the oven to 180°C/350°F and grease a 30cm/11in baking dish.

In a saucepan set over medium-high heat melt together the butter, sugar, apricot jam and vinegar until the sugar has dissolved and the mixture is smooth. Remove from the heat and allow to cool for 5 minutes then pour into a large mixing bowl.

Sift the dry ingredients together then add to the butter mixture, alternating with the milk, mixing well after each addition.

Stir in the beaten eggs.

Pour the batter into the prepared dish and place in the oven.

Bake for 30 minutes until the pudding is dark brown and baked through (a skewer inserted should come out clean).

While the pudding is baking, prepare the syrup.

Bring all the syrup ingredients to a boil and reduce the heat. Allow to simmer for 5 minutes.

Pour the syrup over the pudding as it comes out of the oven.

Allow to stand for 20 minutes then serve with custard or cream.

This is really the best malva pudding out. Quick easy and very tasty. Receipt was easy to follow and makes you look like you know what you doing.
