This is not strictly speaking a Chinese recipe. It's actually a Chinese style dish that's very popular in India. But where it's from isn't as important as what it is - crispy pieces of fried chicken breast smothered in a sweet and sour sauce.


Chicken Manchurian recipe

(1/4 cup) cornflour

Vegetable manchurian is one of the popular manchurian recipes from Indo chinese cuisine. Veg manchurian is made by tossing fried mixed veg balls in sweet, sour and hot manchurian sauce.&nbsp;

Veg Manchurian Recipe with Manchurian Sauce

cabbage (finely chopped)

carrot (grated (1 medium))

beans

capsicum

onions

cornstarch ((white corn flour))

all-purpose flour ((maida) (prefer organic))

bread crumbs ((optional,

pepper

ginger garlic paste

salt ((very little))

Oil (as needed for frying)

garlic (finely chopped)

ginger (finely chopped)

bell peppers ((capsicum) finely chopped)

soya sauce (or tamari)

red chili sauce

ketchup ((optional))

vinegar

cornstarch corn flour

water

water stock

salt

sugar

pepper (coarsely crushed)

red chili powder

Allow the veggies to come to room temperature first.

Cut cabbage to 4 quarters and keep them immersed in luke warm water for 3 to 4 mins.

Drain the water and rinse them well. Drain and chop them finely.

Air dry the cabbage for a while to remove excess moisture.

You can also process all the veggies in a food processor. 

Wash and peel the carrots and grate them.

Chop the beans, spring onions &amp; bell peppers. Mince the ginger and garlic.

Preparation for Manchurian

Add the prepared veggies, cornstarch, plain flour, ginger garlic paste, pepper &amp; salt to a mixing bowl. Mix everything well.

You can also add bread crumbs to make the balls extra crisp.

Mix everything well and make lemon sized balls. The balls must bind well without breaking.

You can also optionally roll these balls in corn starch.

You can make about 12 to 14 balls. Set aside all the vegetable balls.

Frying balls - Heat oil in a deep pan for deep frying.

Check if the oil is hot enough by dropping a small portion of the dough in hot oil.

The dough has to come up without browning. This is the right temperature. 

Gently slide the balls in hot oil &amp; fry on a medium flame.

Do not disturb them for 1 min after the balls are dropped in oil.

They will be delicate and may break if you have not used bread crumbs.

After few seconds of frying, you can keep stirring and fry until they turn golden. 

Drain them on a kitchen tissue.

Baking in Oven - Preheat the oven and bake the balls on a greased wire rack placed over a tray at 200 C for 20 to 23 mins.

Turn them to the other sides after every 8 mins.

Please be alert as the timings may vary depending on the size of the balls.

Making Veg Balls

Heat oil in a pan, then add ginger garlic and saute for a min. 

Add spring onions and capsicum. Saute for 1 to 2 mins on a high flame without burning.

While these fry dissolve cornstarch in water. 

Lower the heat, then add soya sauce, red chilli sauce, tomato ketchup and red chilli paste.

Stir the cornstarch mixture with a spoon and pour it to the pan. 

Next stir gently and pour water. Stir and taste the mixture.

Add vinegar, salt, pepper and sugar all to suit your taste.

The sauce should taste slightly sour, hot and sweet.

Keep stirring and cook on a medium flame until the sauce thickens.

Do not cook till very thick. The sauce will thicken further after cooling.

Switch off the stove and allow the sauce to cool for 1 to 2 mins.

Boiling hot sauce will make the veg balls soft and will lose the crispness.

Make Manchurian Sauce

Add the veg balls to the sauce just before serving. Garnish with spring onions. 

Serve veg manchurian with veg fried rice or noodles.

Veg manchurian recipe | Crispy vegetable manchurian recipe

Here is an Indo-Chinese version of preparing gobhi (Cauliflower) called Gobhi manchurian. It is very delicious recipe and surprisingly not very difficult to make. When you serve and eat, it is worth all the effort.

Gobhi (cauliflower) Manchurian

cauliflower

tbsp all purpose flour

cornstarch

salt (Adjust to taste) plus additional for flour mix

For the sauce:

tbsp oil

garlic

green chilies

onion

tbsp soya sauce

tbsp red (hot) chili sauce (Adjust to taste)

tbsp tomatoes ketchup

Salt -

Take a pot and add  4 cups of water with 2 tsp salt, wait until water starts boiling.

Add gobhi, and boil for about 3 or 4 minutes on medium heat.

Strain gobhi and let it sit for 3 to 5 minutes.

Take a bowl, and add corn flour, all purpose flour,  salt to taste and make a thick paste (with consistency similar to tomato ketchup) .

Heat the oil in a  frying pan on medium heat.

Dip gobhi florets into flour  mix and coat it fully. Fry one or two florets into hot oil and check to make sure that flour mixture is not separated from florets. If it does, add 1 tsp all purpose flour,  1 tsp cornstarch and salt (If required, add additional flour) into flour mix to make it thicker.

Fry all of florets (till golden in color) and keep aside.

Optionally, to make gobhi florets crispier, fry it once till semi fried. Let it cool and fry it again on high flame till golden in color.

For the sauce

Take a wok and add oil, wait until hot then put garlic, onion, green chillies and add little bit of salt.

After about a minutes, add soya sauce, red chilli paste and ketchup, stir in the pan.

Now add spring onions

Add 1 cup water.

Take a small bowl, mix  2 tsp cornstarch mix in 3 tsp of  water and add to the wok

Stir till it becomes thick  (tomato ketchup like consistency). If required, add more cornstarch or water as necessary. Put off the flame.

Take a big serving bowl, add fried gobhi florets and pour the sauce on top and mix .

Garnish with spring onion and serve hot.
