Mango slaw combines crisp and fresh vegetables with sweet mango in a tangy dressing that will tempt your tastebuds. Eat it as a main salad, add tofu or tempeh, or add mango slaw to the top of your favorite sandwich.

Mango Slaw

Green Cabbage or Napa Cabbage (Shredded)

Red Cabbage (Shredded)

Shredded Carrots

Scallions (Green Onions, diced)

Red Mango (diced)

Tablespoons Champagne Vinegar (substitute white vinegar)

Tablespoons Water

Tablespoons Maple Syrup

Lime

Salt and pepper

Tablespoons chopped Parsley to garnish (optional)

Combine all mango slaw ingredients in a large bowl

Whisk the slaw dressing in a separate bowl and pour over the slaw ingredients

Toss well. Cover and place in her refrigerator for at least an hour before serving.

Toss well again before serving.

Taste and add additional salt and pepper taste

Garnish with parsley

Mango Slaw has shredded green cabbage, crisp jicama, and a tangy lime vinaigrette made with juicy sweet mangos. A perfect summer salad.

Mango Slaw Recipe

Mango

limes

orange juice (fresh)

honey

ginger

olive oil

sea salt

chile powder

cilantro

mango (diced)

green cabbage (sliced thin about 6 cups)

Jicama (peeled and grated about 3 cups)

In a blender or food processor, mix until smooth: mango, lime, lime zest, orange juice, honey, ginger, olive oil, salt, pepper, and hot hatch chile powder (or substitute a tiny pinch cayenne).

Keep in a small mason jar in the fridge for up to a week. You will have about 1 cup of dressing from this recipe.

Chop 2 tablespoons of fresh cilantro, stir into dressing. If you blend in the cilantro, it turns the dressing green, and it isn&#39;t orange!

Lime-Mango Vinaigrette

Peel and grate 1/4 of jicama. Use a vegetable peeler to get the tough skin off. Then grate in a Cuisinart or a box grater.
