Here is a dish that melds the best flavors of summer into a robust salad. Yotam Ottolenghi calls for cherry tomatoes, but summer’s best tomatoes would also be right at home among the feta, mint and za’atar, the Middle Eastern spice blend. Serve it alongside grilled meat, preferably in the back yard, summer nipping at the heels.

Yotam Ottolenghis Tomato and Pomegranate Salad

za’atar

olive oil

pomegranate

yellow bell pepper, seeds removed and very thinly sliced

red onion, peeled and very thinly sliced

basil

mint leaves, torn into pieces

lemon juice

Flaky sea salt

Halve or quarter the tomatoes so that they are all roughly the same size, and place them in a large mixing bowl.

Mix the za’atar with 1 1/2 tablespoons of olive oil, and set aside.

To the bowl with tomatoes, add the pomegranate seeds, sliced pepper and onion, the herbs, lemon juice, the remaining 2 tablespoons of oil and 1 teaspoon of salt. Gently mix the salad, then transfer it to a large shallow bowl or serving platter, and dot it with the cheese. Drizzle the za’atar mixture over the salad and serve.

Greek Manouri cheese chargrilled, drizzled with Greek honey, and topped off with toasted sesame seeds. Mild, soft, and extremely versatile, Manouri cheese is a delightful addition to any meze table.

Grilled Manouri Cheese with Honey and Sesame

Manouri cheese (room temperature)

honey

sesame seeds (toasted)

salt

Over medium heat, add the sesame seeds in a pan and stir occasionally, about 3-5 minutes, until toasted. Let cool and transfer to a small cup.

Pat the Manouri cheese dry. In a shallow dish, pour the olive oil, then dip the Manouri cheese in the olive oil on both sides until fully coated. Season with a pinch of salt.

Heat a cast iron grill/griddle over medium heat. Grill the Manouri for about 3-5 minutes on each side, or until grill marks form.

Transfer the Manouri to a plate. Drizzle with honey and top with sesame seeds. Serve with toasted pita or bread.
