Mantije su vrsta pita od mesa, koje se ovdje na Kosovu tretiraju kao kraljica među pitama. Rade se i u BiH, Turskoj, a možda i drugdje. Pogodne su za vrijeme...

Mantije

700 g Pšeničnog glatkog brašna Podravka

1,5 žličica soli

400 ml vode

g maslaca

150 g crvenog luka

400 g mljevene teletine

žličica Vegete

½ žličice soli

½ žličice papra

g rastopljenog maslaca

U velikoj zdjeli zajedno pomiješajte brašno, sol i vodu, pa električnom miješalicom dobro izmiješajte tako da dobijete mekano tijesto. Zdjelu prekrijte kuhinjskom krpom i pustite da odstoji 30 minuta.

U tavicu stavite maslac i zagrijte ga na vatri dok se ne rastopi. Dodajte sitno nasjeckani luk i na srednjoj vatri ga popecite 4-5 min. dok ne postane staklast.

Dodajte meso, Vegetu, sol i papar te ostavite pirjati dok voda koju je meso pustilo ne ispari. Pirjajte meso još 2-3 minute, odložite ga sa strane i pustite da se ohladi.

Tijesto razvaljajte na pobrašnjenoj podlozi, podijelite ga na 8 jednakih kuglica, premažite ih rastopljenim maslacem i pustite da odstoje 20-ak minuta.

Svaku kuglicu malo raširite valjkom za tijesto, pa je rukama lagano razvucite tako da od nje dobijete jednu koru tanko vučenog tijesta (dimenzije otprilike 50x70 cm).

Kada je prva kora razvučena, namažite je rastopljenim maslacem pa na nju položite drugu koru. Postupak ponavljajte dok sve kore nisu potrošene.

Dobivenu koru izrežite na 15 jednakih kvadrata po kojima ravnomjerno rasporedite pripremljeno meso.

Punjene kvadratiće presavinite tako da spojite dijagonalne rubove, pa spojenu stranu stavite prema dolje u maslacem premazanu tepsiju (19x32 cm) kao da slažete buhtle.

Kada ste popunili tepsiju, premažite ih rastopljenim maslacem i stavite u prethodno zagrijanu pećnicu na 230°C 35-40 minuta.

Turkish manti dumplings. Homemade pasta filled with a spicy ground beef mixture, cooked and topped with garlicky yogurt and butter sauce.

¼ bunch parsley, chopped finely

Make the dough by combining flour, eggs, salt and water until everything holds together. Knead it for 5-10 minutes. It won't be a very soft dough.

Knead it well until you have a not very soft dough. You can add extra water or flour to have this result. Cover it with a damp kitchen towel and let it rest for 30 minutes.

Prepare the filling. In a medium bowl, combine ground meat, finely chopped onions, parsley, salt and pepper. Put it aside.

Sift a little flour on  the counter. Grab the dough ball and roll it out, not very thin, about 2mm thick.

Cut it first into strips, then into small squares.

Place about 1/2 teaspoon filling on each square.

Close them up patiently. First fold the tiny square into two and seal all the opposite corners of the dough in the center. Put them on a parchment paper lined baking sheet.

Heat 4 cups of water in a pot, add in a pinch of salt and a drop of oil. Bring it to boil. Add in the dumplings and let it simmer until tender, for 10-12 minutes.

Transfer them into bowls with a slotted spoon.

For the yogurt sauce, mix yogurt, salt and garlic.

For the butter and oil sauce, melt butter and add in olive oil. Add in dried mint and red pepper flakes or paprika, stir. Take it after about 20 seconds.

To serve, pour some yogurt sauce on the dumplings and drizzle a little oil sauce over it before serving.

I wish I could eat  in my home and I think it will be really tasty

A simple Turkish pasta dish made with seasoned minced beef is served over pasta and garlic yogurt. Drizzled with a seasoned butter sauce and garnished with chopped tomatoes and parsley. So easy and delicious.

Viral Anna Pauls Turkish Pasta

pasta of choice

Salt and Pepper to taste

unsalted butter

mint (or fresh)

sweet paprika (not smoked)

mild pepper paste

Turkish chili flakes (or regular chili flakes)

Greek yogurt (or plain yogurt)

garlic (minced, you can use one garlic

Salt and pepper

parsley

Cherry tomatoes (diced)

Cook the 8 ounces pasta of choice according to package directions.

In a large skillet over medium heat, sear the 1 pound lean ground beef until almost cooked through. about 2-3 minutes. The beef should release its natural oils, and no need to add oil.

Add in the diced 2 medium yellow onions, Salt and Pepper to taste, 2 teaspoons sweet paprika powder, 2 tablespoons onion powder, and 1 tablespoon tomato paste.

Mix and sear everything until the onions are translucent and cooked through. About 3 minutes. Remove from heat and set aside.

To make the butter sauce, melt the 1/4 cup unsalted butter over low heat in a small saucepan. Add the 2 tablespoons olive oil, 1 tablespoon mild pepper paste, 1 teaspoon dried mint, 1 tablespoon sweet paprika, and 1 teaspoon Turkish chili flakes. Mix with a spatula to combine. About 1 minute. Set aside.

Next, Make the garlic yogurt sauce. In a bowl add the 1 cup Greek yogurt, 2-3 small garlic cloves (minced), Salt and pepper, and a bit of water (about 2-3 tablespoons) to thin it down if it is too thick. Mix well to combine.

To assemble, place cooked pasta on a deep dish or plate. Then add 1/4 th of the yogurt sauce, top with seasoned beef, drizzle some of the seasoned butter sauce, and garnish with chopped 1/4 cup minced parsley and 1/2 cup Cherry tomatoes (chopped). Enjoy.

Made this without the mint because I didn't have any on hand. It still turned out great! It came together fairly quickly which I appreciated, especially during a busy work week.

I followed this recipe exactly, except no mint or pepper paste. I also diced a bell pepper and tossed in with the onion. I used a high-protein pasta. This is delicious. The garlic yogurt sauce is amazing for how simple it is. I used two giant cloves so it has some kick. My coworkers will not be happy with me tomorrow but who cares. 10/10

This is our second time trying this recipe and this was a 10/10. I loved this recipe! It was creamy and delicious.
