maple bacon cookies

These whimsical pancakes 'n' bacon cookies have all the flavors of our favorite breakfast food combo in soft, delicious cookie form!

Pancakes 'n' Bacon Cookies

all-purpose flour

baking soda

baking powder

unsalted butter, softened

maple sugar

brown sugar

egg, whisked

maple syrup

maple flavor

buttermilk

sugar

water

Begin by gathering and prepping all of your cookie ingredients according to the ingredient list above to have ready and organized for use.

In a medium-size bowl, add the flour, the baking soda and the baking powder, and gently whisk to combine these dry ingredients, and set aside for a moment.

Then, to the bowl of a standing mixer fitted with a paddle attachment, add the softened butter and the two sugars, and cream/mix together for on medium speed until light and fluffy. Add in the whisked egg, the maple flavor and the real maple syrup, and continue to cream/mix for another moment until combined.

Turn the mixer down to a lower speed, and begin adding the dry ingredients in increments, until they get incorporated with the creamed butter/sugar/egg mixture. Once all dry ingredients are added and combined, add in the buttermilk until combined, and turn off the mixer.

Next, divide the cookie dough in half (roughly) in the bowl with a spatula. Place a large piece of plastic wrap on your work surface, and turn half of the cookie dough out onto the plastic wrap, and gently shape it with your hands into a log shape, roughly 12 inches long, not too thick or too thin.

Wrap the plastic around it, twist the ends to secure, and place the cookie dough log into the freezer to firm for at least 45 minutes (or more, if you want to freeze the dough to save some for later). Repeat the process with the other half of the cookie dough.

To bake the cookies, preheat the oven to 350°, and line a baking sheet with parchment paper. Slice the chilled/firmed cookie dough log into 1/2 to 3/4 inch thick slices (cookies), and place the cookie dough slices onto the lined baking sheet. Bake the cookies for roughly 10 to 11 minutes, until soft and chewy, but slightly golden. Take care not to over-bake.

Allow the cookies to cool on a wire rack. While they cool, gather and prep your maple icing ingredients according to the ingredient list to have ready and organized for use.

To make the maple icing, add all ingredients to a bowl and whisk together until smooth (the icing should be thin enough to drizzle, but thick enough to adhere well to the cookies and not get absorbed by them).

Once the cookies are cooled, drizzle the icing over them and sprinkle over the chopped, crispy bacon, and allow it to set for about 20 to 30 minutes before enjoying.

Maple Bacon Cookies are made with bacon grease and maple syrup and are topped with maple icing and crumbled bacon. These cookies are the perfect combination of savory and sweet!

Maple Bacon Cookies

2⅓ all-purpose flour

bacon grease (like John Gordon’s Bacon Up

dark brown sugar (packed)

vanilla extract

maple extract ((or use more vanilla extract))

butter

confectioners’ sugar

pecans

bacon

MAKE THE COOKIE DOUGH: In a medium bowl, whisk together flour and baking soda. Set aside.

In a large bowl, use an electric mixer on medium speed to cream the bacon grease and brown sugar together until smooth, about 1-2 minutes. Add the egg and beat on high for another 30 seconds. Scrape down the bowl on the sides and bottom. Add maple syrup, vanilla extract, and maple extract. Beat on high speed until well combined.

Add flour and baking soda mix to wet ingredients and mix on low until combined. Cover and chill in the refrigerator for a minimum of 2 hours and a maximum of 3 days.

BAKE THE COOKIES: If you have chilled the dough for longer than 2 hours, set it out at room temperature for about 30 minutes before working with it.

Preheat oven to 350°F. Line cookie sheets with parchment paper.

Use a 1 ½ tablespoon cookie scoop to scoop out balls of cookie dough. Place dough balls on a cookie sheet, leaving 2 inches between each cookie. Bake for 12-13 minutes or until lightly browned at the edges and soft in the center.

Remove cookie sheets from the oven and cool on a cooling rack.

MAKE THE ICING: In a small saucepan over low heat, melt butter and syrup together, whisking occasionally. When butter has melted, remove from heat and add confectioners’ sugar, stirring until combined and smooth.

Drizzle over cookies and then sprinkle crumbled bacon on top. Allow the icing to cool completely and set up before serving (about an hour).
