Citrus Kale Salad with Maple Granola and Pancetta Vinaigrette

organic, pastured pancetta, diced ((can substitute bacon if needed))

gluten-free maple-flavored granola ((I recommend Paleonola))

organic baby kale

grapefruit

avocado

red onion

pancetta grease

Dijon mustard

maple syrup

grapefruit juice

organic red pepper flakes

organic extra-virgin olive oil

In a small pan over high heat, crisp up the diced pancetta; set cooked pancetta aside on paper towels to drain, and pour 1 tablespoon of the grease into a small glass bowl, leaving the rest of the grease in the pan.

Toast granola in the pan with the reserved grease for a couple minutes, until crispy and aromatic. Set aside.

To a big salad bowl, add baby kale, grapefruit slices, avocado, red onion, reserved cooked pancetta and toasted granola.

For the vinaigrette, take the small glass bowl with the reserved pancetta grease and add the Dijon, maple syrup, grapefruit juice, red pepper flakes and olive oil. Whisk to combine, season with salt and pepper to taste. Pour over salad and toss until combined. Serve!

Maple coconut granola

oats

olive oil (or coconut oil, melted)

pumpkin seeds

almonds

tbsp desiccated coconut

Preheat the oven to 150C and line a baking sheet with parchment paper.

Combine the dry ingredients of oats, pumpkin seeds, almonds and cinnamon (not the coconut) in one bowl and mix.

In a separate bowl, add the wet ingredients of maple syrup and olive oil (or coconut oil). Then add the wet ingredients into the dry ones and stir very thoroughly so that all the oats, seeds and nuts are well covered with the oil and syrup mix.

Spread the mixture evenly in a thin layer on the parchment paper and let bake for 15 minutes. Remove the granola mixture from the oven, sprinkle in the coconut flakes and give it a good stir. Spread out to an even layer again and return to the oven for 5-10 minutes. At this point keep an eye on it as granola can go from perfectly golden brown to burnt rather quickly!

Small Batch Maple Granola

old fashioned oats

walnuts

brown sugar

cinnamon

nutmeg

salted butter

vanilla extract

Preheat the oven to 300°F (150°C).

In a large bowl, mix together the oats, chopped walnuts, almonds, brown sugar, cinnamon, and nutmeg.

In a small pot, melt the butter over medium heat, then stir in the maple syrup. Remove from heat and mix in the vanilla extract.

Pour the butter and syrup mixture over the oats and nuts. Stir until the oats are well coated.

Spread the granola mixture evenly onto a rimmed baking sheet lined with parchment paper or a baking mat.

Bake for 30 minutes, stirring every 10 minutes to ensure even baking.

After the granola has finished baking, remove it from the oven and stir in the dried fruit.Pro Tip: Always add dried fruit after baking the granola, not before. Baking dried fruit can cause it to become too hard and dry out. By stirring it in at the end, the fruit stays chewy and perfectly complements the crunchy granola.

Great recipe. As a Diabetic I changed up the recipe a little, using sugar free Maple Syrup and sugar substitute brown sugar. I also left out the dried fruit as too high in sugar for me. I also doubled recipe and used 1/2 cup each of natural almonds, Macadamia nuts, walnuts and pecans. Added 1/4 cup no added sugar coconut. I will add fresh blueberries and yogurt when serving. Great low GI breakfast.

Excellent  and easy recipe! Loved the versatility of nuts or dried fruit options.

I doubled the recipe. Added raisins and shredded coconut afterwards.  It is so delicious!  Will be making again and again!
