10-Minute Maple-Glazed Salmon

Rinse salmon and feel for bones to remove. Pat dry with paper towels. Melt butter in a skillet over medium heat.

Add salmon, skin-side down, if there is skin. Sprinkle each piece of fish with salt, pepper, garlic powder, and paprika. Pour 1 1/2 tablespoons syrup over each piece of fish.

Cook the salmon on the first side for two minutes. Flip the fish and cover the pan with a lid. After three minutes, remove any skin by lifting it up with a knife and gently peeling it off with your fingers (if it's too hot, use a spatula.) Discard the skin.

Flip the fish again, and after a minute, check for doneness by seeing if it can be flaked with a fork. If so, turn off the heat. (Cooking time will depend on the thickness of your fish. Be sure to watch any thin pieces carefully and remove them when done, letting the thick pieces cook longer.)

Squeeze the lemon quarter over the salmon and serve with the glaze spooned on top. Store leftovers covered in the refrigerator for up to three days.

Preheat your oven to broil. Line a rimmed baking sheet with aluminum foil and spray with cooking spray.

In a small bowl, mix together the chili powder, paprika, sugar, and salt

Generously sprinkle the chili powder mixture evenly over the tops of the salmon fillets.

Place the salmon on the prepared baking sheet and broil for 6-9 minutes, depending on how thick your fillets are and how crispy you prefer the crust.*

Remove the salmon from the oven and brush the maple syrup over the tops to coat the spice rub. Return to the oven and broil for an additional 1-2 minutes until the maple syrup is bubbling and has formed a crust. Serve immediately.

Curried Maple-Mustard Salmon

(6-oz.) salmon

kosher salt, divided

Dijon mustard

curry powder

Tbsp. olive oil

Blot salmon with a paper towel, and lightly season skin and flesh with 1/2 tsp. salt. In a small bowl, combine maple syrup, Dijon mustard, curry powder, and remaining 1/4 tsp. salt; whisk to combine. 

Heat oil in a large skillet over medium-high. Once hot, add fish, skin side-down, pressing firmly with a fish spatula to avoid the ends curling up. Cook 3 to 5 minutes, depending on thickness, until the flesh turns from translucent to opaque all the way up the sides.Turn off heat, gently flip the fish, and let the residual heat finish cooking the flesh side. Transfer fish to a plate and wipe skillet clean.

Return skillet to burner over medium heat and add butter. Once melted, whisk in maple-mustard mixture. Cook 2 minutes, stirring often, until mixture starts to bubble and thicken.Add salmon back to skillet; use a spoon to generously coat fish in maple-mustard glaze. Finish salmon with a squeeze of fresh lemon juice, and serve over grains with veggie of choice.
