Marinated in Mexican flavors, this broiled flank steak stays juicy and tender from oven to table and is a family favorite fast dinner ready to serve in 15 minutes or less. 

Oven Broiled Mexican Flank Steak

soy sauce

jalapeno pepper (ribs, seeds and core removed)

lime juice

Start by adding all of the ingredients except the steak to a food processor and blend to combine.  Pour your Mexican marinade into a large zip top bag or container and the add your flank steak. Push out any extra air then seal the zip top bag tightly, squish the marinade around the meat to make sure it is all covered  and then park your steak in your refrigerator for anywhere from 5 hours to 12 hours to marinate.

Once your Mexican flank steak has marinated, remove the bag from the fridge and let sit on the counter while you prepare your Pineapple Salsa, sauce and rice.

To re-purpose your marinade into a serving sauce, start by pouring your remaining marinade into a small saucepan and heating over medium high heat, stirring often and watching that it doesn&#x27;t burn.  Bring to a rolling boil and once the marinade has reached a boil, remove from the heat and allow to cool.

Next, prepare your Pineapple salsa as instructed HERE. Add in a few slices of chopped red pepper to add even more flavor and color to your dish and prepare your white or yellow rice following the package instructions.

To cook your Mexican flank steak, heat you oven to Broil and once heated, line a baking sheet with foil and spray non-stick cooking spray. Add you steak to a baking pan and move your oven rack to 6 inches below the broiler. Broil your marinated steak for 4-5 minutes on one side, flip and broil for another 4-5 minutes on the second side, depending on how done you like your steak. Remove from the oven, transfer to a plate and cover with foil and let sit for 5-10 minutes before slicing against the grain in thin slices.

Flank Steak Marinade

brown sugar

Combine the soy sauce, olive oil, brown sugar, cider vinegar, Worcestershire sauce, mustard and pepper in a resealable bag; seal and shake to combine.&nbsp;

Reserve 2 tablespoons of the marinade for later use. Stir the garlic into the bag of marinade.

Add the steak and marinate for 2-24 hours.

Heat an outdoor grill or stove top grill pan to medium-high. Place the steak on the grill and cook for 5-6 minutes per side, depending on the thickness of your meat and the desired level of doneness.

Remove the meat from grill and cover with foil. Let stand for 5-10 minutes and then slice thinly against the grain with a very sharp knife. Drizzle with reserved marinade, then serve.

In a large bowl, whisk together the red wine, soy sauce, olive oil, brown sugar, minced garlic, fresh lemon juice, vinegar, salt, and black pepper.

Place the skirt steak in a large resealable plastic bag and pour the marinade over the steak. Seal the bag and massage the steak to ensure that it is evenly coated with the marinade.

Transfer the steak to the refrigerator and marinate for at least 1-2 hours or up to 6 hours.

Remove the steak from the refrigerator 30 minutes before cooking to allow it time to come to room temperature.

Grilling instructions: Clean the grill grates and lightly oil them with vegetable oil or cooking spray. Preheat the grill to high heat (about 450°F-500°F). Remove the steak from the marinade and pat dry with paper towels. Grill for approximately 4-5 minutes on each side or until the internal temperature registers 125-135℉ (medium-rare to medium) as measured by a digital meat thermometer.

Stovetop Instructions: Set a large cast iron skillet or grill pan over high heat. Add one tablespoon of oil and let it get hot. Remove the steak from the marinade, pat dry with paper towels, and add it to the pan. Use the back of a spatula to gently, yet firmly, press down on the steak to ensure that it is in contact with the skillet (this helps get a nice sear). Cook for 3-4 minutes on each side or until the internal temperature registers 125-135℉ (medium-rare to medium) as measured by a digital read meat thermometer.

Broiler Instructions: Preheat the broiler and position the oven rack about 4-6 inches away from the broiler element. Remove the steak from the marinade and pat dry with paper towels. Line the bottom of your broiler pan with aluminum foil and spray the top rack of the broiler pan with non-stick cooking spray. Place the steak on the top rack of the broiler pan and transfer to the oven. Broil for 3-4 minutes per side or until the internal temperature registers 125-135℉ (medium-rare to medium) as measured by a digital read meat thermometer. Note: Keep a close eye on the steak during broiling, as cooking times can vary depending on your oven and the thickness of the meat.

Transfer the steak to a cutting board. Let the steak rest for about 5-10 minutes, allowing the juices to redistribute within the meat.

Using a sharp knife, slice the steak thinly against the grain (across the muscle fibers) for optimal tenderness.

Marinated Flank Steak

oil ((vegetable or canola oil))

peach juice (or peach nectar*)

Tablespoons dried parsley flakes

Add oil, soy sauce, peach juice, minced onion and parsley to a large ziplock bag.&nbsp;

Add the flank steak to the bag, seal it, and lay it flat in your fridge to marinate for 3-6 hours.

Remove the bag from the fridge about 15 minutes before grilling.&nbsp;

Heat grill to high heat. Once the grill is hot, remove the steak from the bag of marinade (you can discard the marinade) and lay it on the grill.&nbsp;

Cook for 3-4 minutes, then flip to the other side and cook for 3-4 more minutes, depending on how well done you like your steak. I don't use a meat thermometer, but if you do, a general guideline is 125 to 130°F for rare, 140°F for medium rare, and 150°F for medium.

Remove steak from the grill and place it on a cutting board. Cover it with a piece of tinfoil and allow it to rest for 5-10 minutes.&nbsp;

Cut the meat across the grain, at a diagonal, in VERY THIN slices (almost "paper thin"). ENJOY!

Best Marinated Flank Steak

½ lb flank steak, trimmed of fat ((650 grams))

kosher salt and pepper to taste ((add right before grilling))

parsley ((20 grams))

cilantro ((20 grams))

garlic, minced ( (or frozen cubes of Dorot which is always my choice!))

Tbsp red wine vinegar ((45 grams))

Tbsp grainy dijon mustard ((30 grams))

Tbsp Worchestire sauce ((30 grams))

Tbsp brown sugar ((30 grams))

olive oil ((15 grams))

tsp cumin

tsp chili powder

tsp kosher salt

Make the flank steak marinade.

Add all flank steak marinade ingredients to a small food processor or blender and process until smooth.

Tenderize the meat.

Trim steak of any excess fat and place between two pieces of plastic wrap or inside a resealable bag. Pound into an even thickness using a meat mallet or rolling pin to tenderize the meat.

Marinate the flank steak.

Add the tenderized steak and marinade to a large dish or resealable bag and marinate in the fridge for 2-12 hours. Make sure to work the marinade around so it covers the entire steak.

Remove the meat from the fridge.

Remove the meat from the fridge about 30 minutes before grilling (or while preheating the grill) to bring it closer to room temperature. This helps it to be more tender after cooking.

Preheat the grill.

Preheat your outdoor grill (or indoor grill pan) to medium-high heat, (450 degrees F when lid is closed). Carefully oil your grill using oil and paper towels, or spraying cautiously!

Grill the steak.

Sprinkle meat with a little pepper and a generous pinch of kosher salt on both sides. (Don’t forget this step!) Place the steak on the oiled grill grates, and grill for about 4-6 minutes per side, or until an internal thermometer reads 130-135 degrees F for medium rare or around 140 degrees for medium. We like to pull it at 130 since it will continue to cook a little as it rests. Grill time will vary depending on thickness of your steak and desired level of doneness.

Rest, slice, and enjoy!

Remove the steak to a cutting board and let it rest for 10 minutes before slicing. Make sure you slice your steak into thin strips against the grain (perpendicular to the long strands). This helps your strips to be tender rather than tough and chewy!

This was delicious!! I didn't have cilantro/parsley or worchester sauce and the marinade still made this the best flank steak I've ever had! It sat in the fridge for about 5 hours before grilling. This is the only way to marinade it - highly recommend!

Made this last night and I can confirm it really is Lillie's best ever! Will be a rotating staple in my house for sure. The only work is in the marinade but its WORHT IT. Stop thinking about it and just make it.
