Marinated Mushrooms are button mushrooms, briefly sauteed then marinated in a simple, homemade Italian dressing. This 15-minute mushroom recipe makes the perfect, healthy topping and condiment for salads, sandwiches, and snacks. It&#x27;s naturally vegan and gluten-free!

Easy Marinated Mushrooms

lbs Button Mushrooms (5 cups, halved)

Extra Virgin Olive Oil

White Wine Vinegar

Garlic (finely grated)

Tbsp Dried Onion Flakes

Tbsp Italian Seasoning

Sugar (optional)

tsp Crushed Red Pepper Flakes

Salt

tsp Black Pepper

Heat OLIVE OIL in skillet on medium high heat.

Add MUSHROOMS and sauté a few minutes until tender. Remove from heat and allow to cool.

In a mixing bowl, combine OLIVE OIL, WHITE WINE VINEGAR, GARLIC, ONION FLAKES, ITALIAN SEASONING, (optional) SUGAR, CRUSHED RED PEPPER FLAKES, SALT, and PEPPER; whisk until creamy and well combined.

Place MUSHROOMS in an airtight container and pour vinaigrette over them.

Refrigerate and marinate up to 5 days, stirring as needed. Serve chilled.

Roasted Portabello Mushrooms Recipe (with Balsamic and Thyme)

oz small (2" diameter) portobello mushrooms

olive oil

parmigiano cheese

balsamic vinegar

fresh thyme, chopped,

fresh rosemary, chopped,

garlic,

pepper,

Salt,

fresh parsley, chopped (garnish)

Clean the mushroom caps by removing any visible dirt with a damp paper towel, then remove the stems. Discard stems, or use them in a soup or stir-fry. 

Mix olive oil, balsamic vinegar, garlic, and herbs in a small bowl.

Arrange the mushroom caps in a deep baking dish or rimmed baking sheet in a single layer. Pour the sauce over each one. Pour the marinade over the top of the mushroom and coat evenly. Sprinkle the parmigiano cheese over the top of all the mushrooms. 

Roast at 425 degrees F. for 10-15 minutes until the desired doneness is achieved. I like fork tender. 

Garnish with fresh chopped parsley. Serve warm on top of crusty bread!

Marinate in the refrigerator for several hours or overnight. Bring to room temperature before serving.

Imagine a blend of balsamic vinegar, olive oil, garlic and thyme soaked up by the mushrooms that squirts in your mouth when you bite into it......yes!!!Serve as a meal over mash or polenta, pile on that smeared with goats cheese, over steak or grilled chicken breast, or on the side of a big breakfast fry up.

Balsamic marinated mushrooms

700 grams/ 1.4 lb small whole white mushrooms

tbsp extra virgin olive oil

tsp cooking/kosher salt

tsp black pepper

thyme ((sub 1/2 tsp dried thyme))

garlic (, finely minced)

tbsp balsamic vinegar

Preheat oven to 200°C/375°F (180°C fan).

Season - Put mushrooms into a roasting pan (not tray, easier to mix well in pan). They can be snug but should be in a single layer (mushrooms shrink ~25-30%). Toss with olive oil first. Then add salt, pepper, thyme and garlic (minced &amp; whole), then toss again.

Roast 35 minutes, tossing well at the 20 minute mark, or until the mushrooms are browned and soft.

Marinade - While hot, transfer mushrooms into a bowl (including all the juices). Add balsamic and olive oil. Toss well.

Marinate 2 to 24 hrs - Let the mushrooms cool and marinate for 2 hours (uncovered), tossing once or twice, or for even better flavour, marinate overnight (covered in fridge once cool).

Serving - Always serve at room temperature or slightly warmed, for best flavour. And don&#39;t waste the juices - it&#39;s full of flavour!

Serving options - As part of a grazing board, on polenta or mash as a meal, on toast slathered with goats cheese or cream cheese, on the side of fried eggs, on creamy risotto or risoni/orzo. See in post for a long list!

Marinated Mushrooms is a handy side dish that you can make and keep them for 5 or so days in the fridge. And you can even freeze it. Easy Marinated Mushrooms (Japanese Marinade)

/ 0.8lb Asian mushrooms ((note 1))

tbsp sesame oil ((or vegetable oil))

dashi stock ((note 2))

tbsp rice wine vinegar

soy sauce

mirin

Shiitake Mushrooms: Remove the stems and thinly slice them to about 2mm / 1⁄16&quot; thick.

Enoki mushrooms: Remove the woody part of the mushrooms at the bottom and break the clusters into smaller bunches.

King oyster mushrooms: If they are very small, just thinly slice them vertically to about 2mm / 1⁄16&quot; thick. If they are large like mine, cut the mushrooms in half in the middle of the stem, then slice each piece to 2mm / 1⁄16&quot; thick. If the stem is very thick, you may want to halve the stems vertically, then slice them with the cut side facing down so that the width of the sliced piece becomes half of the original stem.

Shimeji mushrooms: Remove the bottom part of the stems that are clustering the mushrooms, but do not cut them too much as you want to keep most clusters intact. Large mushrooms can be separated individually but keep a few small ones clustered together.

Preparing Mushrooms

Heat sesame oil in a frying pan over medium high heat.

Add the mushrooms to the pan and sauté until some pieces start browning and the mushrooms are wilted.

Turn the heat off and add all the Marinade ingredients to the pan. Mix well.

Transfer the mushrooms with the marinade to an air tight container. When the mushrooms cool down, put them in the fridge overnight (note 3).
