Irresistible Mississippi Mud Brownies include an easy homemade brownie recipe topped with warm gooey marshmallows and chocolate frosting. 

Mississippi Mud Brownies (Marshmallow Brownies)

cocoa powder

oil ((vegetable or canola oil))

butter (, softened)

sugar

eggs

vanilla extract

all-purpose flour

salt

mini marshmallows

Preheat oven to 350 degrees F. Grease a 9x13'' pan with non-stick cooking spray.

In a large mixing bowl, pour oil over cocoa powder and mix.

Add softened butter and mix until smooth. Add sugar and mix for 1 minute. Add eggs, one at a time, mixing after each addition. Add vanilla and mix.

Add flour and salt and stir to combine. 

Pour batter into prepared pan. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Remove brownies from the oven and sprinkle the marshmallows evenly on top. Return to the oven for 2-3 minutes or until the marshmallows are puffed. Remove from oven and allow them to cool completely.

Once brownies are cool, make the frosting.

Add melted butter, cocoa powdered, evaporated milk, vanilla, and 2 cups of powdered sugar to a mixing bowl and beat with electric beaters until smooth.&nbsp;

Add more powdered sugar, a cup at a time, mixing well, until you reach your desired frosting consistency. I usually use about 3 1/4 cups powdered sugar.

Spread frosting over the cooled brownies and cut into squares. I've found a plastic knife works best to cut them, or if you make them 1 day in advance they are much easier to cut.

Melt the chopped chocolate in the microwave at 50% power for 2-3 minutes, stirring every 30 seconds until it is almost melted. Continue stirring until it is completely melted and spoon it into a piping bag or a ziplock bag.

Preheat oven to 350°F. Line a 9&#215;13 pan with parchment paper and coat with nonstick spray. You can bake these without parchment and coat the pan as well. Parchment paper makes it easier to lift the brownies from the pan to cut them.

In a large microwave-safe bowl, combine the chopped chocolate and butter. Microwave on high heat in 30 second intervals, stirring after each until smooth. When the chocolate is melted, add in the sugar, eggs and salt and mix until smooth, using a wooden spoon or rubber spatula. Lastly, stir in the flour until combined.

Pour the batter in the prepared pan and bake for 20-25 minutes until the center is just set and a toothpick inserted into it comes out with a few moist crumbs.

Immediately sprinkle the marshmallows on top of the hot brownies and return to the oven for 2 minutes, allowing the marshmallows to puff slightly.

Transfer the pan to a wire rack and prepare the frosting.

In a large saucepan, melt the butter, cocoa powder and milk together over medium heat until smooth. Remove from the heat and whisk in the powdered sugar until smooth and no lumps remain.

Pour the frosting evenly on top of the marshmallows, making sure all are coated.

Allow the brownies to cool completely, 1-2 hours, before removing them from the pan and cutting them into bars.

Preheat the oven to 350 degrees F. Line a square baking dish (8&#215;8 inches) with parchment paper.

Add graham crackers to a food processor. Pulse several times until an evenly crumbled mixture forms.

Combine graham cracker crumbs, granulated sugar, cinnamon, and salt in a bowl. Add melted butter and mix together.

Transfer the mixture to the baking dish. Firmly press it across the bottom of the pan in an even layer.

While the crust is baking, create the &#8220;flax eggs&#8221; by combining ground flaxseed and water in a bowl. Mix together, then set aside for 10 minutes to thicken.

In a large bowl, combine all-purpose flour, cocoa powder, baking powder, and salt. Whisk together.

In a separate bowl, add vegan butter. Microwave for 75-90 seconds to melt (covered). It should be HOT and completely melted. Add granulated sugar and whisk together. Add flax eggs and vanilla, then whisk together once more. Add the bowl of flour/cocoa/baking powder/salt. Mix together just until combined; do not over-mix. Finally, stir in the chocolate chips.

Pour the brownie batter over the graham cracker crust. Spread across the crust in an even layer. The brownie batter will be thick and goopy &#8211; that&#8217;s totally normal!

Bake the brownies for 30 minutes. Remove from the oven and let cool for 10 minutes.

Fudgy Brownies

Top the slightly-cooled brownies with mini marshmallows, graham cracker crumbs, and chocolate chips.

Bake for an additional 5 minutes. If desired, turn the oven to the broil setting and broil for 1-2 minutes for toasted marshmallows. Keep a very close eye on the brownies so they do not burn.

Remove brownies from the oven and let them cool completely. After, slice and enjoy!
