Quick and easy mascarpone pesto pasta is the tastiest creamy pasta dish you’ll ever make in under 15 minutes. It's the best weeknight dinner.

Mascarpone Pesto Pasta

500 g (1/2 lb.) spaghetti noodles

olive oil

basil pesto

mascarpone cheese,

lemon juice

cherry tomatoes, halved

salt (or

black pepper (or

basil leaves (for garnish)

Parmesan cheese, freshly grated (for garnish)

Bring a large pot of salted water to a boil and cook spaghetti according to package instructions or until al dente, about 8-10 minutes. Do not overcook the pasta. Turn off the heat and reserve 1 cup of pasta water, then drain the pasta in a colander and let it cool for 1 minute.

Transfer pasta into a large mixing bowl and add pesto, mascarpone cheese, lemon juice and 1/2 cup reserved pasta water (add up to 1/2 cup more if desired). Stir in cherry tomatoes, and season with salt and pepper. Toss well to coat. 

Top with fresh basil, Parmesan cheese, some dollops of pesto, and a drizzle of olive oil. Serve immediately.

One of my favorite easy meals is this super simple chicken pesto pasta salad! It&#39;s light, fresh, and comes together in less than 20 minutes! With creamy pesto and mascarpone cheese, grilled chicken, spinach, and tomatoes it&#39;s the perfect summer lunch!

Chicken Pesto Pasta Salad

short pasta

mascarpone cheese

pesto*

spinach

chicken (diced)

bacon (cooked and crumbled)

mozzarella balls (halved)

cherry tomatoes (halved)

basil (sliced)

In a large bowl mix together the mascarpone cheese and pesto until fully combined. Set aside.

Cook your pasta according to package directions. Make sure you heavily salt the water and cook the pasta for about 1-2 minutes less than the listed time for perfect al dente pasta!

Drain the pasta and immediately add to the bowl of sauce. [Do NOT rinse the pasta, as the starch will help the sauce cling to the noodles and the residual heat from the pasta will melt the mascarpone a bit making the sauce extra creamy.]

Gently toss the pasta in the sauce until all the noodles are fully coated.

Mix in the spinach and stir a few times until it wilts slightly from the heat of the pasta.

Then stir in the diced chicken, bacon, sliced tomatoes, and mozzarella balls.

Serve immediately while warm, or let chill in the fridge and serve cold!

This chicken pesto pasta salad will keep in the fridge for 3 days, but the noodles with soak up the sauce the longer it sits. So after 2-3 days, you might want to add in a little extra pesto!

i skipped the chicken and added extra pesto and loved it. This definitely tastes more like pesto pasta than pasta salad but it was simple and flavorful

A simple pasta with creamy mascarpone cheese, this is one amazing comforting main dish or side dish that pairs well with fish or chicken. This recipe is made with a lot of fresh pepper like a Cacio e Pepe, but you can scale down the amount added for a plain creamy pasta.

Mascarpone Pasta

11-12 oz dried linguine or spaghetti pasta

garlic cloves

shallot, chopped small (about 1/4 cup)

vegetable broth

pasta water (*reserve about 1 cup total)

black pepper

kosher salt for pasta water

Heat a large pot of water over high heat, and add about 1-2 tablespoons of kosher salt to salt it. Cook pasta in salted water according to package directions then drain, reserving about 1 cup of pasta water.

Add olive oil to a large pan over medium heat, then add garlic and shallots, stirring often for about 1-2 minutes till fragrant and softened. Add vegetable broth, bringing to a simmer until it is reduced to about 1/3 cup of liquid.

Add in pasta water and cooked pasta, using tongs to toss with the shallots and garlic until well-coated. Turn the heat to low and add in mascarpone cheese, continuing to toss the pasta till it gets fully incorporated and very creamy. Add in more pasta water as needed to thin the sauce. Stir in fresh black pepper and adjust any seasonings to taste.

I've been trying to make 1 meal a week for my husband and I instead of eating convenience foods. We usually get two nights of meals when I cook. Tonight's effort: Mascarpone Linguine (subbed in ricotta). It was super easy, especially coming off of a three-day migraine.

Finally made this tonight…SO good! And SO quick &amp; easy! My daughter said it tasted like “restaurant food”😄

Another recipe that is wayyyy tastier than it should be considering how easy it is to make (even with a migraine like I had when I tried it) My new favorite comfort food. I paired it with cod using the Blackened Sea Bass recipe and that was a match made in heaven.
