Make Your Own Holiday Simmering Potpourri Gift

cinnamon sticks (broken (to release scent))

whole cloves

allspice berries

star anise (optional) (but it has a slight licorice scent)

cranberries

orange

rosemary (optional)

festive ribbon and a tag

To make a dried mix package, don't include the cranberries or fresh orange slices. You can add extra ground cinnamon, cloves and allspice to the mix too. The ground spices will release their scent faster.

If including the cranberries and orange, keep refrigerated until gift-giving time. Don't include the ground spices, as they will stick to the orange and the cranberries.

Add the dried mix, fresh cranberries and sliced orange to 2 - 3 cups water (or apple juice) in a saucepan or slow cooker. Simmer over low heat.

Never leave unattended and add water as needed.&nbsp;This mix will last for several days.

Sweet and slightly tart and full of fresh pineapple, small-batch pineapple jam needs no special canning equipment or even pectin to yield a delicious fresh jam. No pressure canning or special equipment required.

Small Batch Fresh Pineapple Jam

sugar

lemon juice ([See Note 1])

pineapple

Peel and cut the pineapple into 1-inch chunks; discard the fibrous core and outer peel.

Add all ingredients into a medium-sized pot and bring to a boil. Do not cover.

Reduce heat simmer  over LOW  heat.  Simmer for about 30 minutes or until the pineapple is tender and most of the liquid has evaporated; Stirring occasionally. Do not Cover.

Remove from the heat and allow to cool slightly.

With an immersion blender or potato masher, crush the fruit to small bite-sized (or smaller) pieces.

The natural sugars in the fruit will thicken the jam.

Store in an airtight container like a mason jar in the refrigerator for up to 3 weeks. Alternatively, freeze in a freezer-safe container for up to 3 months.

Storage:

Great simple recipe. Just added a sprinkle of cinnamon powder and an additional 1/4 cup of brown sugar! Yummy!
