One of my most popular quick and healthy dinner recipes. These Chicken Tostadas are so tasty and satisfying. And the best part is that you can make these in only 20 minutes with simple ingredients!

45 Quick Healthy Dinner Ideas: Chicken Tostadas

corn tortillas

tomatoes (diced)

avocados (diced)

tbsp red onion (finely chopped)

cilantro (finely chopped)

tsp cumin

tsp chili powder

salt

lime

low sodium black beans (drained and rinsed)

chicken (like rotisserie or chicken breast)

feta or Cotija cheese (crumbled)

Cooking spray (I use Misto)

Tostada shells: Line a large baking sheet with a silicone mat and place tortillas in a single layer. Spray both sides of the tortillas with cooking spray and a sprinkle of salt. Bake at 400 degrees F for 6 minutes per side.

Guacamole salsa: Mix tomato, avocado, red onion, cilantro, cumin, chili powder, salt and lime juice.

Assemble tostadas: Top each shell with guacamole salsa, beans, chicken and cheese.

Brown Rice with Lentils and Caramelized Onions

(90 g) quinoa,

(750 ml) mushroom or vegetable broth

olive oil

garlic cloves, chopped

cardamom pods (optional)

1 stick, 1 ¼ inch (3 cm) long

½ tsp ground turmeric

onions,

(14 oz/398 ml) brown lentils, rinsed and drained

(125 ml) plain Greek yogurt

(10 g) cilantro, finely chopped

Lemon wedges,

In a pot, combine the rice, quinoa, broth, 1 tbsp (15 ml) of the oil, garlic, cardamom, cinnamon and turmeric. Season with salt and pepper. Bring to a boil. Cover and simmer over low heat for 20 minutes. Remove from the heat and let sit, covered, for 5 minutes. Remove the cardamom pods and cinnamon stick.

Meanwhile, in a large skillet over high heat, brown the onions in the remaining oil, stirring very frequently, until nicely golden, about 10 minutes. Set aside. 

Stir the lentils into the rice mixture. Transfer to a large serving dish. Top with the caramelized onions and yogurt. Sprinkle with the cumin and cilantro. Serve with lemon wedges.

It is very tasteful and the cilantro really brings up the flavor of the dish. I liked it a lot

Beef Blade Roast

1.2 kg Beef (Bolar Blade)

Tablespoons Olive Oil

Dijon Mustard

Pickling Onions (peeled and halved)

Thyme (fresh)

500 ml Beef Stock

250 ml Red Wine (dry)

Sweet Potatoes (Scrubbed,

Cups Snow Peas

Start by preheating the oven to 320 degrees fahrenheit. Prepare the beef by brushing it with one tablespoon of the olive oil and seasoning it with a little salt and pepper. 

Place a large frying pan over a high heat, then add the beef. Cook it for 6 to 8 minutes, using tongs to turn it around so that all of the edges are browned. Once this is done, transfer the beef onto a rack over a roasting tin. 

Brush the top of the beef with the dijon mustard. Put the beef stock, red wine, thyme and onions into the roasting tin with the beef sitting on top. Cook the beef for around 55 minutes. 

Once the beef is cooked, transfer it to a plate and loosely cover it with foil. Let the beef rest while you continue with the rest of the dish. 

Turn the oven up to 390 degrees fahrenheit. Spread the sweet potato batons over a baking tray and drizzle them with one tablespoon of olive oil. Season them with salt and pepper, then cook them in the oven for 15 to 20 minutes.

While the sweet potatoes are cooking, transfer the contents of the roasting tin into a saucepan. Simmer for 15 to 20 minutes to reduce the sauce. 

Steam the snow peas for 5 to 6 minutes, timing it so they will be ready at the same time as the sweet potatoes and the sauce. 

Slice the beef, then serve with the vegetables. Don’t forget to give each dinner guest a couple of onions from the sauce, drizzle some sauce over the meat, and put any remaining sauce in a jug on the table.
