Vegetable Lasagna with White Sauce

This vegetarian lasagna is made using classic ingredients like veggies, marinara, and bechamel!

Vegetarian Lasagna

olive oil (15 mL)

garlic (minced)

eggplant (diced)

zucchini (diced)

red bell pepper (diced)

spinach (roughly chopped)

milk (low-fat

Tbsp unsalted butter (56 g)

Tbsp all-purpose flour (30 g)

parmesan (30 g)

salt and pepper

Veggies: Heat oil in a large saute pan over medium heat. Add garlic, eggplant, zucchini, and pepper, cooking until zucchini is. slightly soft, about 3 to 5 minutes. Add spinach and cook, stirring constantly, until wilted down, about 1 minute.

Bechamel: Heat milk in the microwave for about 2 minutes, just until warm. Melt the butter in a heavy-bottomed pan over medium heat. Whisk in the flour, cooking and stirring until the mixture is slightly golden brown and no longer smells like raw flour. Slowly whisk in all of the milk, stirring well to evenly combine. Bring the mixture to a simmer and cook until thicken, about 5 minutes. Remove from heat and stir in parmesan, salt, and pepper.

Assemble: Preheat oven to 350°F (175°C). Spread ½ cup of marinara onto the bottom of a 9x9 inch casserole dish. Layer on ⅓ of the lasagna noodles, snapping some to size as needed to fit into your pan. Then layer - ⅓ of the bechamel, half of the veggies, ⅓ of the cheese, and 1 cup of tomato sauce. Top with ⅓ of the lasagna noodles.Repeat for the second layer - ⅓ of the bechamel, second half of the veggies, ⅓ of the cheese, and 1 cup of tomato sauce. Top with ⅓ of the lasagna noodles.For top - Spoon on remaining bechamel, remaining tomato sauce, and sprinkle on remaining cheese.

Bake: Covered tightly with aluminum foil, for 35 to 45 minutes, or until bubbling at the edges. If desired, remove foil and broil for 2 to 3 minutes, until the top is golden brown.

Easy Cheesy Meatless Lasagna (No Eggs)

Cook Pasta

Preheat your oven to 375°F and cook lasagne noodles according to the directions on the box. Strain your pasta and set it aside to cool (see first note below).

Prep and Cook Vegetables

Dice your onion, chop your mushrooms, and mince your garlic. Add them to a large saucepan with the spinach, olive oil, salt, and pepper over high heat, stirring occasionally, until all of the liquid evaporates (about 15 minutes).

Sauce

Add about 2 tablespoons of sauce to a 9x13-inch casserole dish and spread it out evenly to form a thin bottom layer of sauce.

Layers

Place 3 noodles on top in a single layer.

Then, spread about 1/2 of your ricotta across the top of the noodles.

Next, add roughly 1/2 of your cooked veggies, and another thin layer of sauce.

Top with a thin layer of Italian blend shredded cheese.

More Layers

Repeat steps 4 through 7, using up the ricotta and cooked vegetables.

Final Layers

After your second layer of shredded cheese, add a third layer of lasagna noodles, a fourth layer of sauce, and a final layer of shredded cheese. Top it off with the Parmesan cheese.

Bake, Garnish and Serve

Bake for 25-30 minutes until the cheesy top starts to brown. Option to garnish with fresh basil. Enjoy!
