Mediterranean Steak Bowls

lb. flank steak (may substitute NY strip or sirloin steak)

(10 ounces) grape or cherry tomatoes

½ medium red onion,

head romaine lettuce, chopped (~10-12 cups)

cucumber,

kalamata olives, sliced

garlic hummus (or store-bought hummus of choice)

feta cheese

Skewers

Lemon wedges and/or torn fresh mint leaves

yogurt

olive oil oil

½ lemon

garlic,

oregano

dill

salt

mint

Combine all dressing ingredients in a small bowl and whisk to combine. Store in the fridge until ready to use, up to 5 days. 

Preheat grill to high heat (about 450℉). 

Pat the steak dry with paper towels and sprinkle both sides with salt and pepper. 

Thread cherry tomatoes and quartered onions onto skewers, brush with the oil, and sprinkle with salt and pepper. 

When the grill is hot, place flank steak and tomato and onion skewers on the grill. Grill veggies, turning occasionally, for 5-8 minutes or until onions are softened and tomatoes start to blister. 

Grill the steak for 4-5 minutes, then flip and grill an additional 4-5 minutes for medium-rare (6-7 minutes per side for medium) or until an instant-read thermometer reads 140℉ for medium-rare or 150℉ for medium. 

Remove steak to a plate and cover loosely with another plate, or oil and allow steak to rest for 10 minutes before slicing thinly against the grain. 

While the steak rests, divide the chopped romaine between 4 plates or shallow bowls. Top with sliced steak, grilled vegetables, hummus, chopped cucumbers, olives, and feta cheese. 

Drizzle with Herbed-Yogurt Dressing and garnish with lemon wedges and/or torn fresh mint leaves.

Made this without the steak for a vegetarian option.

Using shallow dinner bowls, start by spreading about 3 to 4 tablespoons of hummus on one side. Next, add the salad, then add 3 to 4 falafel patties.

Fill the empty spots in your bowls with the fresh vegetables, olive and pickles, and sliced feta cheese.

Finish each bowl with a generous drizzle of extra virgin olive oil and a dash of sumac to season (optional).

So delicious, flavorful and filling! I couldn't eat all of mine and had to save it foe lunch the next day. Used the air fryer falafel for this, along with a rice cauliflower salad, Marinated artichokes, olives, Cucumber slices, chopped tomatoes, pickled garlic, feta, parsley, and cold leftover garlic and herb boiled potatoes. Kept anything from going bad, a great go to I will revisit time and again for sure! (Please pardon typos!)

Mediterranean Chicken &amp; Rice Bowls (SUPER Easy!)

lb chicken breasts,

Greek dressing

bags Success Boil-in-Bag White Rice, white rice

(15.5 chickpeas

grape tomatoes

red onion

tzatziki

hummus

First marinate the chicken. Place the chicken breasts in a bowl or container and pour the greek dressing over top. Thoroughly coat both sides of the chicken breasts. Cover and place in the refrigerator. Marinate for at least 1 hour. I recommend doing overnight if possible. 

Next prepare the Success Boil-in-Bag White Rice according to the package directions. Set aside.

Then cook the chicken. Air Fry: Place the marinated chicken breasts in a lined air fryer basket. Air fry at 400 degrees F for 12-15 minutes, depending on the thickness of the chicken, flipping halfway through. I tend to do closer to 15 minutes or a little extra to get a nice color. Bake: Place the marinated chicken breasts on a parchment paper or aluminum foil lined baking sheet. Bake at 400 degrees F for about 20 minutes.

Assemble the rice bowls and divide the ingredients into four servings. Start with a base of cooked Success Boil-in-Bag White Rice. Next add the chicken, chickpeas, cucumber, tomatoes, and red onion. Lastly add the hummus, tzatziki, and feta cheese. You can also add an extra drizzle of Greek dressing if you would like.
