Phyllo pizza with chicken, vegetables, fresh cilantro and mint leaves. The flaky phyllo dough and fresh herbs take pizza to a new level of gourmet. Easy and delicious! Makes a great dinner or appetizer.

Phyllo Pizza with Chicken, Vegetables and Fresh Herbs

phyllo dough (12"x17")

mozzarella cheese

green bell peppers, washed, dried, chopped

red onions, chopped

Kalamata olives, pitted, chopped

green olives, pitted, chopped

cilantro

mint

butter,

olive oil

salt and pepper

red pepper, optional

Prepare toppings as indicated in the ingredient section above. Set each topping aside separately.

Melt butter and combine with olive oil; brush a large baking sheet with the oil-butter mixture.

Assemble phyllo sheets in baking dish. Lay first sheet down and brush with the oil-butter mixture. Repeat with next five sheets.

Now add half of the shredded mozzarella cheese.

Continue laying phyllo sheets one-at-a-time repeating the process and brushing each sheet with the oil-butter mixture.

Coat the top sheet with the oil-butter mixture and add the second half of the shredded mozzarella.

Now, evenly spread pizza toppings: chicken, tomato (pet dry with napkin), green pepper, onion, and olives (hold the cilantro and mint leaves for later). Sprinkle with a little salt and a lot of black pepper, and brush the veggies with a little of the oil-butter.

Cut pizza carefully into three-inch squares, and place in the 375F oven for 20 minutes or until phyllo dough turns golden brown.

Remove from oven and top evenly with the fresh cilantro, mint leaves and crushed red pepper, if using.

I love the idea of the stuffed crust! (layering in the mozzarella under a sheet of fillo) I plan to try this recipe very soon as it looks amazing. Thanks for posting!

I found your blog a few months ago while searching for a tabbouleh recipe.  I subscribed immediately and have loved all your recipes (I try to make at least 1 or 2 a week, usually more!).  I just made this phyllo pizza - now that I know how to use phyllo (thanks to you), I want to use it for everything!  I was blown away by the excellent flavor in this dish just from a few simple veggies, chicken, and herbs.  Wow!  

I decided to try more Mediterranean dishes because I love the flavors.  My children now ask when I make a new recipe, "Mama, is this Mediterranean?"  They are so excited to try each new dish and I'm thankful that they've enjoyed most of them, as has my husband.  You've even inspired me to cook more seafood.  Thank you for all these wonderful, flavorful, delicious recipes!

4 of your recipes in 5 days - this Is also delicious.  I was concerned about the phylo dough sticking to pan so lined the bottom with parchment paper. Allowed us to not cut it beforehand and slid it right out onto a cutting board. Where I will alter next time is I believe it needs some wonderful garlic.    Maybe add minced garlic with the veggies or put some in butter/oil mixture for dough or both! Never can have too much garlic.!

Can’t tell you how many times I have made this. Yummy beyond words. Making it again as I type this. Altered this way:  
Added 4 cloves of minced garlic and minced in with tomatoes  - yum!
Used roasted diced tomatoes (drained juice)
No olives - not a family favorite

This Mellow Mushroom inspired pizza has a crust even crust-haters will eat up! The secret ingredient is molasses!

Homemade Mellow Mushroom Inspired Mediterranean Pizza

water

tbsp molasses

tsp active yeast

flour

active wheat gluten

tsp salt

cornmeal

minced garlic

mozzerella cheese

chicken breast

red onion, chopped

feta cheese

garlic butter, melted (optional)

cheese (optional)

In a small bowl combine water, olive oil and molasses.

In a stand mixer (affiliate link) combine flour, gluten, yeast, and salt.

Add water mixture to stand mixture and mix on low using dough hook for 30-60 second until combined.

Form dough into ball and place in greased bowl.

Cover bowl with loose plastic wrap and let sit at room temperature for 2 hours.

Cut dough in two and roll each into a tight ball by folding the edges into the center. Allow dough to rest covered for 30 minutes.

Form each ball into crust by stretching the dough in two hands while rotating it.

brush crust with olive oil and add minced garlic.

Top with chicken, onions, feta, and mozzerella cheese.

After removing from oven immediately brush crust with melted garlic butter and top with parmesan if desired.

Ok, as an actual Mellow owner, I say the recipe is sort of close but your Mellowterranean build is missing 3 things 1) sliced black olives, 2) roasted red peppers and 3) the EVER important tzatziki sauce.  We use sour cream as opposed to Greek yogurt for consistency.

My family and I absolutely LOVE this recipe! I have made it every single week since I found it 6/7 weeks ago. Some feedback from KitchenAid — they do not recommend running the mixer longer than 3-5 minutes. I found this out after making the recipe 6/7 times and my mixer burned up, needing a replacement! Not sure if the dough will still be as good without the full 12 minute mix but here’s hoping!! Bc that is the beat dough EVER!

Pizza bianca (white pizza) based on olives and olive oil.

Best Olive Pizza Recipe

dough ball (such as our Easy Peasy Dough)

flour (for work area)

olive oil (extra virgin)

Spice House's Greektown Seasoning

Kalamata olives (pitted and sliced)

Green olive of

olive

mozzarella cheese (fresh preferred)

artichoke hearts (chopped)

feta cheese (crumbled)

spinach ((about 12 full leaves))

Preheat the oven

Stretch/roll out the pizza dough to make a pizza ~12 inches in diameter

If you use a pizza pan, add thin coat of olive oil.

If using a pizza peel, flour the peel so the dough won&#039;t stick.

Prepare Your Dough

Have all of your toppings ready to apply. Drain, pit, and slice your olives and combine in a bowl.

Prepare the Ingredients

Place the dough on the peel or pan. You may need to straighten the edges with your fingers.

Distribute your Greektown seasoning evenly over the pizza leaving about 1&quot; of the outside edge without.

Pour the olive oil onto the center of your pizza dough.

Use a brush to spread the olive oil evenly across the entire pizza and evenly distributing both the oil and the seasoning.

Sprinkle the olive mix and any other toppings you&#039;ve chosen (such as artichoke hearts, anchovy bits, and/or feta cheese) evenly over the dough. If you are adding a leafy green (like spinach or basil), put that aside until the pizza is cooked.
