Easy shrimp recipe, coated in Mediterranean spices and skillet-cooked in a light white wine-olive oil sauce with shallots, bell peppers and tomatoes. Ready in 25 minutes or less. Be sure to read through the tips and check out the step-by-step photos and video above.

Easy Mediterranean Shrimp Recipe

Lebanese Rice recipe (or make rice according to package), optional

shrimp

tbsp all-purpose flour

tsp smoked Spanish paprika

salt and pepper

tsp coriander

cayenne

tsp sugar

tbsp butter (I prefer to use ghee clarified butter)

tbsp Private Reserve extra virgin olive oil

shallots (about 3 1/2 ounces), thinly sliced

garlic cloves, chopped

green bell pepper

tomato

broth

dry white wine

lemon juice

parsley leaves

First, make Lebanese rice according this recipe. Leave covered and undisturbed until ready to serve. Alternatively, you can make brown or white rice according to store-bought package. (Optional)

Pat shrimp dry and place it in a large bowl. Add flour, smoked paprika, salt and pepper,  coriander, cayenne, and sugar. Toss until shrimp is well-coated.

In a large cast iron skillet, melt the butter with the olive oil over medium/medium-high heat. Add shallots and garlic. Cook for 2-3 minutes, stirring regularly, until fragrant (be sure not to burn the garlic.) Add bell peppers. Cook another 4 minutes or so, tossing occasionally.

Now add the shrimp. Cook for 1 to 2 minutes, then add the diced tomatoes, broth, white wine and lemon juice. Cook for 5 minutes or so until shrimp turns bright orange.  Finally, stir in chopped fresh parsley.

Serve immediately with cooked rice (See more suggestions below.)

One of the hurdles iis that we are 36 miles from the nearest town, but, having read your recipe yesterday, I had shrimp delivered today and will be cooking your recipe tonight, for a party of guests. I made this after a late work night. I followed the recipe exactly. It was on the table in about 30 minutes and was so delicious and healthy!

Fantastic.  Subbed jar of fire roasted red peppers for fresh. Added MeatChurch Holy Voodoo to shrimp dredge.  Served on top of whole wheat linguine. It's a keeper!!!

Easy Mediterranean Shrimp Recipe! The perfect dinner in minutes

This baked sheet pan Mediterranean shrimp recipe is an easy, healthy one-pot dinner. Richly flavored with garlic, feta, tomatoes, and more!

Sheet Pan Mediterranean Shrimp

lemon

olive oil

garlic (minced (about 1 tablespoon))

salt

black pepper (plus additional serving)

oregano

grape tomatoes (left whole)

kalamata olives (pitted

onion

zucchini

lemon juice (from the same lemon above)

red pepper

feta cheese

parsley

Prepared lemon rice or brown rice

Preheat

Preheat the oven to 450 degrees F. Line a large rimmed baking sheet with parchment paper or a silicone baking mat.

Whisk

Cook the vegetables: Zest the lemon into a large bowl. Add 1 tablespoon lemon juice (reserve the lemon&#039;s remaining juice for the shrimp and serving), oil, garlic, salt, pepper, and oregano. Whisk to combine.

Add the artichokes, tomatoes, olives, and onion.

Slice

Trim off the ends of the zucchini, then quarter lengthwise so that you have four batons. Slice the batons crosswise into ½-inch pieces. Add them to the bowl with the other vegetables. With your hands or a large spoon (hands are easier) toss to coat.

Bake

Transfer the mixture to a large rimmed baking sheet and spread it into an even layer (keep the bowl handy; no need to clean it yet). Place in the oven and bake until the tomatoes begin to soften and release their juices, about 12  minutes.

Stir

Prep the shrimp: While the vegetables are cooking, in the same bowl you used for the vegetables, stir together 1 tablespoon lemon juice, oil, oregano, red pepper, garlic, and salt. Add the shrimp and toss to coat.

Remove the baking sheet from the oven and add the shrimp (discard any liquid that collects in the bowl). With a large spatula, stir to combine the shrimp and vegetables together. Spread back into an even layer.

Return to the oven and continue baking until the shrimp are pink, opaque, and cooked through, 6 to 10 minutes more depending upon the size of your shrimp. Do not overcook! As soon as the shrimp look opaque and pink, they are cooked.

Serve

Remove the pan from the oven. Sprinkle with the feta and parsley and squeeze the remaining 1 to 2 tablespoons lemon juice over the top. Season with a pinch of additional salt and black pepper to taste. Serve warm with rice or baguette slices.

Mediterranean Shrimp Skillet

tbsp extra virgin olive oil

shallots (finely chopped)

garlic (chopped/minced)

tsp kosher salt

tsp black pepper

tsp red pepper flakes

28 oz can diced tomatoes (do not drain)

chicken broth

capers

orzo

Kalamata olives (pitted, lightly chopped)

basil (chopped)

oz block feta cheese (cut into 1/4 inch dice)

crusty French loaf, warm Ciabatta, pita or naan

In a large non-stick skillet, heat the olive oil over medium heat.

Add the shallot and sauté for 2-3 minutes, do not brown. Add the sugar, salt, garlic, oregano, black pepper, red pepper flakes, stir around the pan for another 30 seconds.

Pour in the tomatoes, chicken broth and capers, bring to a simmer.

Add the orzo and stir it in so that it is mixed into the liquids. let it simmer over medium heat for 10 minutes, stirring occasionally so it doesn&#039;t stick to the bottom of the pan.

Nestle the shrimp into the sauce and cook covered for 4 minutes, until the shrimp are turned pink. Pro Tip: If your pan doesn&#039;t have a lid just cover it with a baking sheet or foil.
