Patates limonates is a classic Greek side dish. Golden potato wedges are roasted in the oven with lemon juice and chicken broth, then crisped up and served alongside your favorite dipping sauce.

Greek Lemon Potatoes: Patates Lemonates

lbs yellow potatoes,

olive oil (120 ml)

garlic,

oregano

salt

Black pepper,

chicken broth (120 ml)

lemons, juiced (about 1/3 cup or 80 ml)

1. Preheat the Oven

Wash and peel the yellow potatoes (optional) before slicing them into wedges.

Transfer the wedges to a 9×13-inch (23×33 cm) baking dish.

2. Prepare the Potatoes

Add the chopped garlic, dried oregano, salt, and black pepper to taste.

Toss the potatoes thoroughly to ensure they are evenly coated in the oil and seasonings. Spread them out in an even layer in the baking dish.

3. Season the Potatoes

Place the baking dish in the preheated oven and roast for 20 minutes.

4. Roast the Potatoes (First Round)

Remove the baking dish from the oven. Pour the chicken broth evenly over the potatoes.

Toss the potatoes gently to coat them with the broth, then spread them out again in an even layer.

5. Add the Broth

Return the dish to the oven and roast for another 15 minutes.

6. Roast the Potatoes (Second Round)

Remove the dish from the oven again and drizzle the fresh lemon juice over the potatoes. Toss to coat thoroughly.

7. Add the Lemon Juice

Roast the potatoes for an additional 30–35 minutes, or until they are fork-tender and golden brown around the edges.

If you prefer extra-crispy edges, broil the potatoes for 2–3 minutes at the end of roasting.

8. Roast Until Golden

Serve the potatoes hot, paired with aioli, tzatziki, or your favorite dipping sauce.

9. Serve

Mediterranean Lemon Rice with Chickpeas, Spinach, Tomatoes, and Feta

jasmine rice

chicken broth

olive oil

oz grape tomatoes (sliced in half)

garlic (minced)

spinach (chopped)

lemon juice

oz chickpeas (canned)

feta cheese

extra virgin olive oil

oregano (for garnish)

First, rinse the uncooked rice. Place a fine mesh strainer over a large bowl in a kitchen sink. Add rice to the strainer and run cold water over the rice, using your hands to move it and wash it. Dump the water from the bowl occasionally. The water will initially be murky but should get clearer and clearer as you get rid of more starch. When the water is clear, you&#39;re done washing the rice.

Add 1 cup of uncooked rice and 1.5 cups of chicken broth to a medium size saucepan. The proportion of liquid to rice will depend on the type of rice you use (refer to the package instructions).

Bring to a boil, reduce to a simmer, and cook the rice for about 20 minutes (again, verify the times with the package instructions), occasionally stirring, until the liquid is absorbed and the rice is tender. Remove the rice from heat and let it rest covered while you proceed with the rest of the recipe.

Cook rice

In a large, high-sided skillet, combine half of the halved grape tomatoes, minced garlic, 1 teaspoon of dried oregano, 1/4 teaspoon of salt, and 1 tablespoon of olive oil. Cook the tomatoes on medium heat for about 2 minutes until they soften and release juices.

Stir in fresh spinach and cook until it wilts.

Add cooked rice and drained chickpeas.

Add 3 tablespoons of freshly squeezed lemon juice and the remaining uncooked halved grape tomatoes. Reheat on medium heat, stirring everything to combine. Add 1 extra tablespoon of olive oil if you like.

How to make lemon rice

In a medium bowl, combine cubed Feta cheese with 1 tablespoon of extra virgin olive oil, 1 tablespoon of freshly squeezed lemon juice, 1/2 teaspoon of dried oregano (add more to taste), 2 tablespoons of chopped fresh oregano (if using).

Mix so that the herbs and olive oil coat the cubed Feta cheese.

How to make a feta cheese mixture

Mix half of the feta cheese mixture into the skillet with lemon rice. Reheat gently to warm it and soften the cheese with heat. Remove from heat. Season with salt and black pepper to taste.

When serving, top the Mediterranean lemon rice with the remaining feta mixture and sprinkle fresh oregano on top.

Assembly

Fast, simple, and delicious  I sautéed diced onions and bell pepper before adding the garlic and tomato,had frozen spinach on hand, so defrosted and squeezed out the liquid and tossed that in.  I also added diced, cooked chicken breast to up the protein.  This is definitely a make again meal.

Very good!  My husband even liked it.  Next time I’ll add more lemon juice to the lemon rice mixture.  I store recipes on my Pinterest account and comment on any changes I make so they are easily accessible the next time I make a dish.  I notice Comments are turned off for this recipe; that’s very frustrating and I don’t understand why!  Now I’ll have to search through comments on this site to try to find mine.
