WHAT YOU NEED
400g cherry tomatoes, halved
2 cloves garlic, sliced
3 tbsp olive oil
2 tsp salt
300g fettuccine
Boiling water
1 tbsp stock powder (optional)
300g spinach leaves
Handful of rocket leaves
½ cup grated Parmesan

WHAT YOU DO
🍅 In a deep frying pan, add your halved tomatoes and sliced garlic.
💦 Drizzle over olive oil and sprinkle with salt.
🍝 Lay the fettuccine on top. If using stock powder, dissolve it in a cup of boiling water and pour over the pasta.
🔥 Add more boiling water until the pasta is just covered, then pop on the lid and cook on high for 6 minutes.
🥄 Remove the lid, give the pasta a wiggle to separate, then stir in spinach and rocket until wilted.
🧀 Mix through Parmesan cheese and cook until the pasta is tender.
