Vanilla Melting Moments Cookies with Nutella-Cream Cheese Filling

unsalted butter,

all-purpose flour

cornstarch

confectioners’ sugar

vanilla extract

Nutella

cream cheese, softened (light cream cheese is okay)

To the bowl of a stand mixer fitted with the paddle attachment (or large bowl and electric hand mixer), beat the butter on medium-high speed until light and fluffy, about 3 minutes.

Stop, scrape down the sides of the bowl,...

Stop, scrape down the sides of the bowl, and add the remaining cookie ingredients. Mix on low speed until incorporated, about 2 to 3 minutes. Dough will progress from very crumbly and sandy, to soft and combined. After dough has combined; don’t overmix. Dough will be soft, and on the sticky and tacky side.

Using a medium 2-inch cookie scoop, form 2-tablespoon mounds...

Using a medium 2-inch cookie scoop, form 2-tablespoon mounds (I made 12). Place mounds on a large plate, flatten slightly with the tines of fork to create a criss-cross pattern (or use your palm or a flat drinking glass bottom if you don’t want a pattern). Cover with plastic wrap, and refrigerate for at least 3 hours, or up to 5 days, before baking. Do not bake with warm dough because cookies will spread and bake thinner and flatter (there are no leaveners or eggs to help them stay thicker; you’re relying on chilled dough).

Bake for about 9 minutes, or until edges have set and tops are just beginning to set, even if slightly undercooked, pale and glossy in the center. They should not be ‘browned’ and should stay a pale white/cream shade. Do not overbake because cookies will firm up as they cool.

Spread a generous 2+ tablespoons of filling on 6 cooled cookies, and match them up with the 6 unfrosted halves, and join together to create sandwiches.

Melting Moments Cookies

g (4 oz) salted butter, room temperature

g (1⅖ oz) powdered sugar

pure vanilla extract (optional)

g (4 oz) potato starch (preferred) or corn starch

80 g (2⅘ oz) cake flour

Powdered sugar for dusting cookies

Preheat oven to 350°F (176°C). Line the baking sheet with parchment paper.

In a mixing bowl, beat butter, powdered sugar until creamy, light and fluffy. Add in the vanilla extract and stir well. Fold in the potato starch, cake flour and mix well until a soft dough is formed.

Divide the dough into 2 rounds. Use your palms to shape them into small balls. To make the pattern on the cookies, use a fork and press gently onto the top of the round cookies. Dip the fork in water after each press to prevent the cookie dough from sticking to the fork.

Place baking sheet in the bottom part of the oven. Bake for about 10 minutes or until the cookies turn very slight brown. Remove from the oven and let cool for about 5 minutes. Dust some powdered sugar over cookies before serving.

Melting moments cookies are a melt-in-your-mouth shortbread cookie that&#x27;s really easy to make!

unsalted butter (at room temperature)

sugar

finely grated zest of half a lemon*

cornstarch**

salt

powdered sugar (for sprinkling)

Combine the butter and 6 tablespoons powdered sugar in a large mixing bowl and cream with an electric mixer on medium speed until very light and fluffy; this will take a couple of minutes.

Add the vanilla and lemon zest and beat until combined.

Sift the flour, cornstarch, and salt over the butter mixture. Beat on low speed until a cohesive dough forms, stopping to scrape the sides and bottom of the bowl a few times. (The dough will be crumbly at first but it will eventually come together.)

Stir a few times with a rubber spatula to ensure all of the dry ingredients are incorporated, then cover the bowl and refrigerate for 1 or 2 hours.

After the dough has chilled, preheat the oven to 350. Spray 2 large baking sheets with cooking spray.

Shape the dough into 1-inch balls and arrange 2 inches apart on the baking sheets.

Use the bottom of a flat-bottomed glass (or just use your palm) to flatten dough balls to 1/4-inch thickness. (If the glass sticks you can spray it lightly with cooking spray.) Don’t get the cookies too thin or they’ll burn!

Bake 12 to 14 minutes, until the cookies look set all over. The cookies WILL NOT brown.

Let the cookies sit for 1 minute on the baking sheets, then use a thin metal spatula (I use a large offset spatula) to transfer the cookies to a wire rack. Don’t use your fingers or the cookies will crumble.

Sift the remaining powdered sugar over the tops of the cookies while they’re still warm. (You can do a second coat after the cookies cool if you want.) Serve.

Cool cookies to room temperature before storing them—they don’t have to be room temp to serve them though!

Uneaten cookies can be stored at room temperature in an airtight container, layered with wax paper, for about a week

The cookies can also be frozen, also in an airtight container, for up to 3 months.

I grew up having these for Christmas in th 70s.  My mother would put flavored red and green frosting on top usually a spearmint.

Ooh I remember my Mom making cookies like these when I was a kid, and I LOVED them. They're an unassuming cookie...you wouldn't think they're SO delicious, right!? Perfect for Christmas!

Interesting!  This is the first I've heard of melting moments cookies, but I must say that I'm intrigued!  1/2 cup of cornstarch?  Yup, I need to try these!  Plus, it's cookie season, and Santa needs cookies!!  These sound delicious with a mug of strong coffee!

I know I'd love these because I actually make my shortbread cookies with cornstarch! What a fun name too! These would be such a fun and delicious addition to my holiday cookie tray :)  Can't wait to try!

Melting moments cookies, also known as cornstarch cookies, are an easy shortbread-like cookie that absolutely melts in your mouth. They're simple enough to make that anyone, even non-bakers, can make this recipe successfully!

These cookies are literally melting in your mouth! Simple. Easy. Scrumptious! You probably already have all the ingredients in your pantry.

Melting Moments Cookies (Cornstarch Butter Cookies)

unsalted butter (250 grams), softened at room temperature

sugar(75 grams)

cornstarch (65 grams)

all-purpose flour (200 grams)

In a large mixing bowl, mix butter, powdered sugar and vanilla extract with an electric mixer or in a stand mixer with a paddle attachment until smooth.

You can do the same steps with your hands too. Just make sure you combine everything well.

Cover and chill the dough for half an hour.

Line a baking sheet with parchment paper.

Make mini balls from the dough and place on the baking sheet leaving about 1-inch space.

Gently press a fork on the cookies to give them a nice shape. (See how to make it in the video below)

Bake for 13 minutes or until the edges are very slightly golden.

Remove from the oven, let them sit on the baking sheet for 5 minutes. Then transfer onto a wire rack to cool them completely. 

These turned out FANTASTIC. Highly recommend. I didn't actually expect them to melt in my mouth, but they did! And I was so excited to make my whole family try them. Thanks so much for the recipe!

I think I should have read the comments before making. I followed the recipe with 1 1/2 c flour and 1/2 c of corn starch and they were crumbling. I had to use the warmth of my hands to melt them into balls before baking. 
Then after baking them, they are dry. 

Please revise, albeit it’s a great recipe with the proper measurements.

I made this cookie yesterday for  holiday party and it was a big hit! my Irish friend said "perfect short bread". Thank you for always giving such easy to follow directions. Every recipe I make--- made a few already--- turns with great flavors... and brings a little taste of home to me.

These cornstarch cookies are a delicious melt in your mouth cookie that uses minimal ingredients for great results!

Melting moments cookies

butter (unsalted, softened)

Preheat your oven to 350°F. Line baking sheets with parchment paper.

In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add in the vanilla extract and mix again until combined.

In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Slowly start adding the dry ingredients to the butter mixture. Make sure not to overmix so the cookies stay soft.

Take about 1 tablespoon worth of cookie dough and roll it into 1-inch ball. Place the balls on the prepared baking sheets, leaving about 2 inches of space between each cookie dough ball. Press down very gently with a fork then place in the middle rack of the oven and bake for 10 minutes. (do not flatten the cookies too much when pressing with a fork to keep the cookies from spreading too much.

Allow the cookies to cool down on the baking sheet for 5 minutes before using a thin spatula to transfer them to a cooling rack. These cookies will be very soft so proceed with caution.

Dust them with more powdered sugar while they&#39;re warm. If the sugar melts, add another dusting of powdered sugar after they&#39;re fully cool to give them that snow look.
