Who knew Cabernet and cranberries would make such a dynamic duo? Add dried figs (plumped in the Cabernet ahead of time), and you end up with a winey, fruity fig bar, minus the cookie. This sauce is so fine, you'll be spooning leftovers on ice cream or slathering it on toast in place of jam. It's worth buying extra cranberries and freezing them so you can make more to last you through the winter. Editor's Note: This recipe is part of our Gourmet Modern Menu for Thanksgiving for 2 or 20. Prawns and burnt butter spaghettini

unsalted butter, chopped

skim milk powder

dried spaghettini

small green prawns, peeled

(60 milliliters) dry vermouth or white wine

lemon

Dill sprigs and chopped roasted hazelnuts, to serve

'The Pot' pork and puha with steamed vegetables

kgs Pork bones (Main)

tsp Salt, for the pot

Bay leaves, (optional)

kg Puha, remove flowers, tarnished leaves, long stalks and rinse (Main)

Carrots, sliced

¼ Pumpkin, sliced

Kumara,

Potatoes, use small or gourmet potatoes

Salt

Put the pork bones and bay leaves in a large pot and drown them in cold water. Add the salt and bring to the boil with pot lid off.

Still with pot lid off, simmer very gently for an hour or so until the meat is falling off the bone.

Add puha to the pot. With pot lid on, simmer very gently for about 5-8 minutes. Turn element off, and allow puha to steam in the pot with the lid on for 5-10 minutes.

Before serving, gently turn puha over in the stock of the pot.

In another pot, steam or gently boil the vegetables with a teaspoon of salt until soft.

To serve, plate up and finish off by pouring a little of the stock water over the dish. Season to taste.

11. Las chuletas de cerdo (comida del jueves) se preparan a la plancha. Con un poco de sal y pimienta. Unos tres minutos por lado a fuego medio/alto. Se recalientan en el microondas o a la plancha.​​12. Para las tortitas americanas (pancakes), puedes seguir esta receta. Las puedes guardar en la nevera hasta una semana y hasta un mes en el congelador.​​13. La coca de verduras la puedes preparar antes de consumirla, si tienes tiempo. Corta la masa de pizza en dos partes iguales extendidas hasta un cm de espesor. Colócalas en una bandeja de horno y ponles encima las verduras asadas: pimiento, berenjena y cebolla. Condimenta con sal y aceite de oliva. Si quieres prepararla para guardar, cocínala unos 10 minutos, retira del horno, déjala enfriar a temperatura ambiente antes de ponerla en el congelador o la nevera. Si la vas a cocinar antes de servir, hornéala durante unos 15 minutos, o hasta que la masa comience a dorar.
