Mini lentil tacos are a fun dinner or great Mexican appetizer for parties. The mini taco shells are filled with a delicious easy lentil taco meat. Vegan.

Mini Lentil Tacos

flour tortillas

cooking oil

tbsp oil

onion (finely chopped)

soy sauce

oregano

½ tsp sweet smoked paprika

¼ tsp chilli powder

(14 ounces 400 grams) green lentils (drained and rinsed)

carrot

Sliced red cabbage

Parsley

Method

Preheat the oven to 180C.

Use a circular cookie cutter to cut as many small rounds out of the tortillas as you can fit.

Use a brush (or cooking oil spray) to lightly grease the underside of a muffin tray. Place the tortilla rounds between the cups of the upturned tray to form taco shapes, then bake in the oven for 5 minutes or until they begin to turn golden. Allow them to cool in the tray and they will firm up a bit.

Heat the oil in a frying pan, then add the onion (save a little to garnish if desired) and cook for a few minutes until soft but not browned.&nbsp;

Add the soy sauce, oregano, paprika and lentils and stir well. Cook over a medium heat for 5 minutes, stirring often.

Meanwhile, make the filling.

Fill the taco shells with the filling, then top with veggies and parsley as desired.

A mini version of Mexican Street Corn! This Elote corn recipe is made with baby corn so it's a great appetizer or vegetarian party food. Perfect for Day of the Dead, Cinco de Mayo, cookouts and picnics.

Mini Mexican Street Corn

baby corns

mayonnaise ((or dairy free mayo))

sour cream

tbsp cilantro (coriander) (finely chopped)

garlic (minced)

lime juice

cayenne

cilantro (coriander)

Heat a griddle pan until hot. Lightly brush the baby corn with a little oil, then place onto the hot griddle pan and cook until char lines form, turning occasionally. Alternatively, steam the baby corn for a few minutes or cook on the BBQ grill (carefully so the corn doesn't fall in!).

Whisk together the mayonnaise, sour cream, cilantro/coriander, garlic, lime zest and juice and cayenne.

Brush the baby corns with the mayo mixture to coat lightly, then roll each corn in parmesan and sprinkle with a little coriander.

Serve with a little squeeze of lime.

Mexican Sopes Recipe

masa harina (corn flour)

salt

shortening

water

In a mixing bowl combine the masa harina and salt. Add the shortening and rub in with your fingers so that it is evenly distributed. Add warm water and knead until mixture is smooth and slightly sticky. If the dough is dry add more water, 1 tablespoon at a time. Dough should be soft and moist like play-doh and not dry. Divide dough into 8 portions. Cover with a damp cloth to keep the dough soft and moist.

Line a tortilla press with plastic wrap. Place a ball of dough on the press and cover with another piece of plastic wrap and press down to form a little 1/4-inch-thick patty. Peel off the plastic wrap. (If you don’t have a tortilla press you can use a heavy skillet or pot to make the dough patties or use your hands to form a patty.) Repeat with remaining balls of dough.

Preheat a lightly greased comal (griddle) with olive oil on medium-high heat. Cook a patty on the comal for about 2 to 3 minutes on each side until dry.

While the partially cooked patty is still warm and as soon as you are able to handle it, pull the dough of the patty up and outward towards the edge, creating a little ridge of dough all the way around the circle to create a little “boat” or sope. Repeat with the remaining patties.

Add a drizzle of oil to the pan and cook sopes until lightly browned and slightly crispy on each side.

Fill each sope with the filling of your choice and garnish with your favorite toppings.

Sopes are similar to corn tortillas but thicker with pinched edges to form a border.
